Main Ingredients- Fresh Chard (Bundles) 150g
Broth & Seasonings- Rice Water 1L (use the third and fourth rinses)
- Dried Anchovy Powder 1 Tbsp
- Dried Shrimp Powder 2/3 Tbsp
- Dried Shiitake Mushroom Powder 1/2 Tbsp
- Miso Paste 1 Tbsp (adjust according to saltiness)
- Green Chili Pepper 1/2
- Red Chili Pepper 1/2
- Minced Garlic 1/2 Tbsp
- Ground Perilla Seeds (Deulkkae) 2 Tbsp
- Rice Water 1L (use the third and fourth rinses)

Cooking Instructions
Step 1
First, snap off and remove the tough fibrous parts of the chard stems. Using only the tender leaves will result in a much more delicious soup.

Cut the prepared chard into bite-sized pieces. If you don’t have a large amount, you can use it as is without blanching. If you have a lot of chard, lightly blanching it will make it more tender.

The secret to a flavorful Chard Miso Soup lies in the rice water! Prepare the third and fourth rinses of rice water. In the rice water, dissolve the anchovy powder, shrimp powder, and shiitake mushroom powder, ensuring there are no clumps. This step adds a deep, savory richness to the broth.

Add the miso paste to the prepared rice water broth and bring it to a gentle boil. Stirring well to dissolve the miso without lumps is key to a smooth, delicious soup.

Once the broth is boiling, add the prepared chard and let it simmer briefly. Avoid overcooking the chard, as it can become mushy. A short cooking time will keep it tender and vibrant.
