As we spend more time at home, trying new home-cooked meals becomes a fun activity! If you’re tired of eating the same old rice dishes, how about a satisfying morning sandwich paired with a cup of aromatic coffee? It’s simple yet manages to be both delicious and nutritious, which is wonderful. Let’s get started with ‘Morning Sandwich,’ a super easy recipe from KkanKkanMom!
Ingredients- 2 Potatoes
- 6 Eggs
- 1 Onion
- 1/2 Cucumber
- Mayonnaise
- Herb salt (to taste)
- Morning buns
Cooking Instructions
Step 1
First, peel the potatoes and cut them into bite-sized pieces (about 2-3cm) suitable for sandwich filling. Pre-cutting the potatoes helps reduce the boiling time, making the process more convenient.
Step 2
Place the cut potatoes and eggs in a pot and boil them. Washing the eggs before boiling them with the potatoes is hygienic and saves time – a win-win situation!
Step 3
Once the potatoes and eggs are fully cooked, carefully remove them from the pot. Gently peel the shells off the eggs while they are still warm.
Step 4
Transfer the well-boiled potatoes and eggs into a bowl and mash them. Ensure the potatoes are cooked until very soft for easy mashing, and the eggs are hard-boiled to maintain their texture when mashed. Using a fork or a potato masher will make this step easier.
Step 5
Prepare half an onion and half a cucumber. Thinly slice or finely chop the onion, and remove the seeds from the cucumber before dicing it finely.
Step 6
Finely chop the prepared onion and cucumber using a food processor (chopper) or a knife. If you have any arm discomfort, using an appliance is a good alternative. If using a knife, aim for a very fine mince.
Step 7
The key is to not mash the vegetables too finely; aim for a slightly coarser chop so that there’s a pleasant crunch when you bite into the sandwich. This textural contrast makes the sandwich even more enjoyable.
Step 8
Add the chopped onion and cucumber to the mashed potatoes and eggs. Season with herb salt to your preference and add a generous amount of mayonnaise.
Step 9
Mayonnaise acts as a binder, helping all the ingredients come together. Add enough to ensure the mixture is moist and well-combined.
Step 10
Carefully slice the morning buns in half horizontally. Handle them gently to avoid crumbling.
Step 11
Generously spoon the prepared egg and vegetable salad onto the bottom half of each morning bun. You can also place the top half of the bun on top to create a complete sandwich, according to your preference.
