Introducing our nutritious and delicious Tofu Nut Soup, a delightful blend of creamy tofu and crunchy nuts. It’s incredibly easy to make, making it the perfect choice for a busy morning meal. Enjoy a bowlful for a satisfying start to your day that’s packed with goodness.
Main Ingredients- 300g Tofu (approx. 1 block)
- 1.5 cups Milk
- 1 Onion
- 1 Tbsp Butter
- 1 tsp Salt (or Garlic Salt)
- 1 packet Mixed Nuts (e.g., ‘Haru Nuts’ or similar)
Cooking Instructions
Step 1
First, melt 1 tablespoon of butter in a pan. Add the thinly sliced onion and sauté until translucent. This step will bring out the natural sweetness of the onion, enhancing the soup’s overall flavor.
Step 2
To the pan with the sautéed onions, add the block of tofu (drained if possible) and 1.5 cups of milk. Ensure all ingredients are in the pan for blending.
Step 3
Using an immersion blender, carefully blend the ingredients directly in the pan until smooth and creamy. Alternatively, you can transfer the mixture to a regular blender. Continue blending until no lumps remain.
Step 4
Reduce the heat to medium-low and simmer the soup. Stir occasionally to prevent sticking. You can adjust the consistency by adding more milk if it’s too thick, or simmering longer if it’s too thin.
Step 5
Finally, add 1 teaspoon of salt to season the soup. Taste and add more salt if needed. Once the seasoning is just right, turn off the heat.
Step 6
Ladle the finished soup into serving bowls. For an extra touch of texture and flavor, take 1 packet of mixed nuts, finely chop them (you can place them in a zip-top bag and crush them), and sprinkle generously over the soup before serving.
