Stew Ingredients- 1 can Spam
- 1 onion
- 1 block tofu
- 4 cups broth (anchovy-kelp or rice water)
- 1/2 stalk green onion
- 1 chili pepper (e.g., Cheongyang or red chili) (optional)
Seasoning Paste- 2 Tbsp soy sauce
- 1 Tbsp fish sauce
- 1 Tbsp minced garlic
- 2 tsp sugar
- 2 Tbsp gochugaru (Korean chili flakes)
- Pinch of black pepper

Cooking Instructions
Step 1
First, line the bottom of the pot with generously sliced onions. As the onions cook, they will release their sweetness, enhancing the flavor of the stew.
Step 2
Slice the Spam into about 1cm thick pieces, and cut the tofu into similarly thick, large chunks. Since Spam can be quite salty, it’s best to balance it with tofu in a 5:5 ratio. This prevents the stew from becoming too much like a Budae Jjigae (army base stew) and allows the mild tofu flavor to shine through. Arrange the sliced Spam and tofu attractively in the pot.
Step 3
Let’s make the delicious seasoning paste! In a bowl, combine 2 Tbsp soy sauce, 1 Tbsp fish sauce, 1 Tbsp minced garlic, 2 tsp sugar, 2 Tbsp gochugaru, and a pinch of black pepper. Mix well until thoroughly combined. This ratio is a base; feel free to adjust the amount of soy sauce or fish sauce to your taste, or add more gochugaru for extra spice. Taste the stew as it cooks and make adjustments.
Step 4
Pour in the prepared broth (anchovy-kelp or rice water) until the ingredients are just submerged. Add the diagonally sliced green onions and chili peppers (if using) on top. Adding chili peppers will give the stew a delightful spicy kick.
Step 5
Now, bring the stew to a boil over high heat. Once it starts to bubble vigorously, reduce the heat to low and simmer for about 5-10 minutes, allowing the ingredients to cook through and the flavors to meld. Serve hot with a bowl of rice and enjoy!
