Hearty and Delicious Spam Kimchi Rice Bowl Recipe
Simple Stir-fried Spam and Kimchi Rice Bowl: A True Rice Thief!
With just the kimchi and Spam you have at home, you can whip up a fantastic meal in no time! Experience the magic as a bowl of rice disappears in an instant with the fantastic harmony of sour and sweet kimchi and savory Spam. We’ve included detailed steps so even beginners can easily follow along.
Main Ingredients- 1 can Spam (approx. 200g)
- 1 medium onion
- 2 cherry tomatoes (or 1/2 regular tomato)
- 1 handful aged kimchi (approx. 1 cup)
- 5-6 dried anchovies for broth (optional, for extra umami!)
- Cooked rice, as needed

Cooking Instructions
Step 1
First, prepare all the ingredients for the dish. Peel and wash the onion, and take the Spam out of the can. Chop the kimchi into bite-sized pieces for easier stir-frying.
Step 2
Dice the Spam into bite-sized cubes (about 1cm thick). Slice the onion thinly or chop it coarsely. Remove the stems from the cherry tomatoes and halve them. (If using a regular tomato, peel, remove seeds, and dice.)
Step 3
Heat 1 Tbsp of olive oil in a pan over medium heat. Add the diced Spam and stir-fry until golden brown. The Spam will release its own oil, so you don’t need to add too much. Once the Spam is browned, set it aside on a separate plate.
Step 4
Add another 1-2 Tbsp of olive oil to the same pan and add the sliced onion. Stir-fry until the onion becomes translucent. The onion will sweeten as it cooks. At this stage, you can add the dried anchovies to stir-fry for added umami. You can remove the anchovies later if desired.
Step 5
Once the onion is sufficiently softened, add the prepared aged kimchi and halved cherry tomatoes to the pan and stir-fry together. It’s important to cook the kimchi until it becomes tender. Add 1 Tbsp of sugar to mellow the kimchi’s sourness and enhance its flavor.
Step 6
Using a spatula or chopsticks, mix and stir-fry the ingredients evenly. Make sure the Spam, kimchi, onion, and tomatoes are well combined. Stirring occasionally will help them cook evenly. Using chopsticks can prevent ingredients from clumping together.
Step 7
Continue to stir-fry for about 5-7 minutes until the vegetables are wilted and all ingredients are tender and well blended. Be careful not to overcook, as the kimchi can become too mushy. Cook until it’s tender with a nice sheen.
Step 8
Generously spoon the delicious stir-fried Spam and kimchi mixture over a bowl of warm rice. Finish by sprinkling some sesame seeds on top for an extra nutty aroma. This dish is wonderful as a rice bowl or as a side dish with plain rice. Enjoy your meal!
