Rich Gang Doenjang Recipe to Revive Your Summer Appetite
On scorching summer days when your appetite wanes, this dish is a lifesaver! Make a generous batch of this rich Gang Doenjang, perfect for enjoying with fresh cabbage wraps or loofah leaf wraps. It’s a delightful recipe that fills your mouth with delicious flavors. Packed with various vegetables and meat, it’s also incredibly nutritious!
Main Ingredients- 300g ground pork
- 1/2 potato (small)
- 1 onion
- 1/2 zucchini
- 1 king oyster mushroom
- Plenty of green onion (white parts preferred)

Step 2
Prepare all vegetables (potato, onion, zucchini, king oyster mushroom, green onion, Korean chili peppers) and ground pork for cooking. Dice the potato and zucchini into 1cm cubes. Finely chop the onion. Thinly slice or chop the king oyster mushroom. Chop the green onion and deseed the Korean chili peppers before chopping them.
Step 3
Heat a pan with a little cooking oil over medium-low heat. Add the chopped green onions and sauté until fragrant, releasing their aromatic oil to create ‘green onion oil’. This forms the base aroma for your delicious Gang Doenjang.
Step 4
Once the green onion oil is fragrant, add the chopped onion and diced potato. Sauté over medium heat until the onion becomes translucent and the potato is slightly tender, about 3-4 minutes.

Now, add the ground pork and cook over medium heat until it’s no longer pink. It’s important to break up the meat as it cooks to prevent clumps.

Add the prepared king oyster mushrooms and 3 tablespoons of doenjang. Stir-fry together for about 1-2 minutes, being careful not to burn the doenjang. Stir-frying enhances the savory depth of the soybean paste.

Add 1 tablespoon of minced garlic to add flavor. Pour in 300ml of water. Bring to a boil over high heat, then reduce to medium-low and simmer until it reaches a desired consistency. This allows the flavors of the ingredients to meld beautifully into the sauce, creating a smooth, not overly thick, Gang Doenjang.
Step 8
Once the doenjang mixture begins to simmer, add the prepared zucchini. Adding it towards the end ensures it’s tender but not mushy, retaining a pleasant texture.

When the sauce is simmering and the zucchini is starting to cook, add the chopped Korean chili peppers for a spicy kick. Feel free to add more if you prefer it spicier.

With all ingredients combined, reduce the heat to low and let it simmer gently for about 5 more minutes, either covered or uncovered. This step allows the sauce to thicken slightly and the flavors to deeply infuse into the ingredients.

Finally, season with a pinch of black pepper for added aroma. You can also add a touch of sesame oil or sesame seeds if desired.
