Introducing a super simple Tofu Tuna Stew recipe that even tired moms can easily make. It delivers a deep and refreshing flavor without complicated steps, resulting in a satisfying meal in no time. ‘Home Cook Baek’ is truly a gem! (I’m a big fan of Baek Jong-won! Haha) You won’t need many side dishes; this stew alone is enough to finish a bowl of rice.
Main Ingredients- 1 block firm tofu (cut into cubes)
- 1 can tuna (drained of oil)
Seasoning & Aromatics- 1/2 onion (sliced thinly)
- 1 stalk green onion (cut diagonally)
- 1 Korean chili pepper (chopped, adjust for spiciness)
- 4 Tbsp gochugaru (Korean chili powder)
- 2 Tbsp soy sauce (or regular soy sauce)
- 1 Tbsp minced garlic
- 1 Tbsp salted shrimp (minced finely)
- 1 Tbsp perilla oil
- Pinch of black pepper
- 3-4 cups anchovy-kelp broth (or rice water, plain water)
- 1/2 onion (sliced thinly)
- 1 stalk green onion (cut diagonally)
- 1 Korean chili pepper (chopped, adjust for spiciness)
- 4 Tbsp gochugaru (Korean chili powder)
- 2 Tbsp soy sauce (or regular soy sauce)

Cooking Instructions
Step 1
First, cut the tofu into bite-sized pieces (about 2-3 cm thick). Lightly salt the cut tofu and let it sit for about 10 minutes. This allows the tofu to absorb some seasoning and helps it firm up by drawing out moisture through osmosis. This way, the tofu won’t easily crumble when cooking the stew. Gently pat dry with paper towels.
Step 2
In a bowl, combine all the seasoning ingredients and mix well. Add the sliced 1/2 onion, diagonally cut 1 stalk green onion, chopped 1 Korean chili pepper, 4 Tbsp gochugaru, 2 Tbsp soy sauce, 1 Tbsp minced garlic, 1 Tbsp finely minced salted shrimp, 1 Tbsp perilla oil, and a pinch of black pepper. Mix thoroughly to create the seasoning paste. Adding salted shrimp significantly enhances the umami flavor.
Step 3
Add the drained canned tuna to the seasoning paste and gently toss to coat. Marinating the tuna beforehand with the seasoning will result in a richer flavor.
Step 4
Spread the thinly sliced onions evenly on the bottom of the pot. Then, arrange the prepared tofu pieces attractively on top of the onions. Placing onions at the bottom prevents the stew from sticking and adds a subtle sweetness.
Step 5
Spoon the prepared tofu and tuna seasoning mixture over the tofu. Next, pour in the anchovy-kelp broth (or rice water, plain water) until the ingredients are just covered. You can adjust the amount of broth according to your preference.
Step 6
Place the pot on the stove over high heat and bring it to a rolling boil. Once the broth starts boiling, reduce the heat to medium and let it simmer until all ingredients are cooked through.
Step 7
Finally, add the diagonally sliced green onions and chopped Korean chili peppers, and simmer for another moment until finished.
