- A pinch of black pepper
Sauce- 1/2 Tbsp granulated sugar
- 1 Tbsp soy sauce
- 1/2 Tbsp mirin or cooking wine
- A drizzle of sesame oil
For Stir-frying Onions- 3 Tbsp water
- 1/2 Tbsp granulated sugar
- 1 Tbsp soy sauce
- 1/2 Tbsp mirin or cooking wine
- A drizzle of sesame oil
For Stir-frying Onions- 3 Tbsp water
Cooking Instructions
Step 1
First, prepare half an onion by thinly slicing it into strips. Slice it uniformly for a pleasant texture when cooked.
Step 2
Finely chop the green onion. It’s a good idea to set aside a small amount for garnish.
Step 3
Crack 2 fresh eggs into a bowl and whisk them together until the yolks and whites are well combined. Heat a generous amount of cooking oil in a pan over medium heat. Quickly pour in the whisked eggs and stir them briskly to make scrambled eggs. Remove the scrambled eggs just before they are fully cooked; this will result in a softer, more moist texture.
Step 4
Prepare your canned tuna. Carefully drain about half of the oil from the can using a sieve, leaving a little for flavor.
Step 5
Without adding any extra cooking oil to the pan, add the drained tuna directly and stir-fry. Lightly sprinkle some black pepper to remove any fishy odors. Sauté until the excess moisture evaporates, which will give the tuna a fluffier texture.
Step 6
In a separate pan, heat a little cooking oil. Add the thinly sliced onions and chopped green onions, then stir-fry over medium-low heat until the onions become translucent. It’s important to cook them gently to bring out their natural sweetness.
Step 7
Once the onions are translucent, add the pre-mixed sauce (1 Tbsp soy sauce, 1/2 Tbsp sugar, 1/2 Tbsp mirin, and a drizzle of sesame oil) and continue to stir-fry. Add about 3 Tbsp of water while stir-frying to simmer the onions, making them moist and flavorful as they absorb the sauce. Be mindful of the heat to prevent the sauce from burning.
Step 8
Serve the warm rice in a bowl. Generously spoon the deliciously stir-fried onions over the rice, ensuring they cover it nicely.
Step 9
Finally, top the bowl with the soft scrambled eggs. Garnish with the chopped green onions and, if desired, a sprinkle of crushed red pepper for a touch of heat. This completes your visually appealing, three-colored Tuna and Onion Rice Bowl. Enjoy your meal!
