Spicy Gochujang Stew with Tuna and Potatoes: A Rice Lover’s Dream
Introducing a recipe for a hearty and spicy tuna and potato stew that’s easy to make at home. The combination of tender potatoes and flavorful tuna creates a delicious stew that will have you finishing your rice in no time π
Main Ingredients- 1 potato (medium size)
- 1 onion (medium size)
- 1 can tuna (150g)
- 1 handful green onions (approx. 1/2 stalk)
Seasoning Ingredients- 1 Tbsp gochujang (generous)
- 2 Tbsp soy sauce
- 1 Tbsp sesame oil
- 1 Tbsp minced garlic
- 1 Tbsp red pepper flakes
- 0.5 Tbsp sugar
- 450ml water (about 3 tuna canfuls)
- 1 Tbsp gochujang (generous)
- 2 Tbsp soy sauce
- 1 Tbsp sesame oil
- 1 Tbsp minced garlic
- 1 Tbsp red pepper flakes
- 0.5 Tbsp sugar
- 450ml water (about 3 tuna canfuls)
Cooking Instructions
Step 1
Wash the potato thoroughly and cut it into thick pieces, about the size of your finger’s width. Cutting them too small can cause them to break apart during cooking, so aim for a substantial size. Slice the onion to a similar thickness as the potatoes. Use the entire can of tuna, including the oil, as the oil adds a rich flavor to the stew.
Step 2
In a small bowl, combine 1 Tbsp gochujang, 2 Tbsp soy sauce, 1 Tbsp sesame oil, 1 Tbsp minced garlic, 1 Tbsp red pepper flakes, and 0.5 Tbsp sugar. Stir well to ensure there are no lumps and to create a smooth seasoning paste. Preparing the seasoning mixture in advance makes adjusting the stew’s flavor much easier.
Step 3
Choose a pot with some depth, suitable for simmering. Add the thickly sliced onion and potatoes, the entire can of tuna (with its oil), and the chopped green onions to the pot.
Step 4
Pour the prepared seasoning paste evenly over the ingredients in the pot.
Step 5
Use an empty tuna can to measure the water: rinse the can and fill it about 3 times with water to get approximately 450ml (or use a measuring cup for accuracy). Bring the stew to a boil over high heat. Once boiling, reduce the heat to medium-low. Cover the pot and let it simmer gently for about 10 to 15 minutes, or until the potatoes are tender when pierced with a chopstick.
Step 6
Once the potatoes are fully cooked, taste the stew. If it’s not salty enough, adjust the seasoning with a little salt or soy sauce. For an extra kick, a pinch of black pepper can be added. Your delicious gochujang tuna and potato stew is now ready!
Step 7
This stew is wonderful served over a bowl of hot rice, making for a satisfying meal. Enjoy it for lunch with a fried egg on the side, or pair it with a cold beer or soju in the evening β it goes wonderfully with both!
Step 8
This spicy and hearty tuna and potato stew is a must-try! We hope you enjoy making and eating it. Have a delicious and happy day! π
