Main Ingredients

  • 1 can (150g) canned tuna
  • 1/2 block (approx. 200g) firm tofu
  • 2 Korean green chilies (Cheongyang peppers)
  • 1 red chili pepper
  • 1 medium onion
  • 1/2 stalk scallion

Seasoning

  • 1 Tbsp fish sauce (anchovy or sand lance)
  • 1 Tbsp minced garlic
  • 2 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 1 Tbsp chili oil

Cooking Instructions

First, prepare the vegetables. Thinly slice the onion. For the green and red chilies, remove the seeds and slice them diagonally about 0.5cm thick. Slice the scallion diagonally to a similar thickness.

Cut the tofu into slices about 0.7cm thick. If they are too thin, they might break apart while cooking, so thicker slices will help them keep their shape nicely.

Drain the oil from the canned tuna by placing it in a sieve. (If you drain the oil completely, it will result in a lighter flavor.) If you are using spicy tuna (gochutuna), be aware that it can be quite sweet, so you might want to use plain canned tuna or adjust the sweetness in your seasoning.

Let’s make the delicious jjageuli seasoning! In a bowl, combine 1 Tbsp fish sauce, 1 Tbsp minced garlic, 2 Tbsp soy sauce, 1 Tbsp oyster sauce, and 1 Tbsp chili oil. Mix well. If you prefer less spiciness, you can omit the chili oil. If using plain canned tuna, adding 1/2 Tbsp sugar and 1 Tbsp cooking wine (mirin) will enhance the flavor.

Heat a little cooking oil in a deep pot or wok. Add the sliced scallions and onions and sauté over medium-low heat until fragrant. Once the onions become translucent and start to release their sweetness, pour in 2 cups (approx. 400ml) of water and bring it to a boil.

Once the water is boiling, add the prepared tuna and tofu. Pour in all the seasoning mixture. Gently stir to combine the ingredients. Reduce the heat to medium and simmer for another 5-7 minutes. Jjageuli is a dish where the natural flavors of the ingredients shine, so it doesn’t need to be cooked for too long. Once the ingredients are cooked and the flavors have melded, it’s almost ready.

Finally, add the diagonally sliced green chilies and simmer for another moment to complete this delicious Tuna Dubu Jjageuli! If you like it spicier, you can add 1 Tbsp of gochugaru (Korean chili flakes) for an extra kick.
