Key Ingredients- 1 can Tuna (drained of excess oil)
- 1 cup Green Onion (chopped)
- 10+ Cocktail Shrimp (optional, to taste)
- 1 Tbsp Minced Garlic
- 1 Tbsp Butter
- Pinch of Salt
- Pinch of Black Pepper
- 1 Tbsp Oyster Sauce
- 2 Eggs
- 1/2 Onion (diced)
- 1.5 cups Cooked Rice (warm)
Cooking Instructions
Step 1
First, prepare all the ingredients for your fried rice. Feel free to use up any leftover vegetables in your fridge or ingredients you personally enjoy! Keep the 2 eggs as they are. Finely chop about 1 cup of green onions. Dice half an onion – too much onion can make the dish overly sweet. If you like shrimp, prepare at least 10 cocktail shrimp. Don’t forget the star ingredient: 1 can of tuna!
Step 2
Heat a generous amount of cooking oil in a wide pan over medium-low heat. Add all the chopped green onions and stir-fry them. Creating fragrant green onion oil is the key to the deliciousness of this fried rice. Cook slowly, stirring to prevent burning.
Step 3
Once the green onions start to release their aroma, add 1 tablespoon of minced garlic. Sauté together for about 30 seconds to 1 minute until the garlic is fragrant. Be careful not to burn the garlic.
Step 4
When the fragrant smell of garlic and green onions fills the air, add the diced onion. Stir-fry until the onion becomes translucent and releases a slightly sweet aroma. Well-cooked onions add sweetness and depth of flavor to the fried rice.
Step 5
Once the onions are partially cooked, add the cocktail shrimp and stir-fry until they turn pink and are cooked through. If you’re using small, thin shrimp, about 10 pieces is good. For larger shrimp, 5-7 pieces might be sufficient. Pre-cooking the shrimp ensures they are evenly distributed in the fried rice.
Step 6
Push all the cooked ingredients to one side of the pan. Crack the 2 eggs into the empty space. While making a fried egg on top is an option, scrambling the eggs directly into the rice creates a creamier and more integrated flavor profile for a simple one-bowl meal.
Step 7
Using chopsticks or a spatula, gently scramble the eggs until they are just set. Then, mix them with the cooked vegetables and shrimp on the other side. Now it’s time for the tuna. If the oil from the tuna can is excessive, it can make the rice soggy, so drain off most of the oil before adding the tuna. Add the tuna and stir-fry it with the other ingredients.
Step 8
Continue to stir-fry everything together until well combined. Season with a pinch of black pepper to remove any gamey odors and a tiny pinch of salt to enhance the natural flavors of the ingredients. Keep the seasoning light at this stage, as more will be added later.
Step 9
Now it’s time to add the rice, the foundation of your fried rice. For two servings, add about 1.5 cups of warm cooked rice. Adding too much rice can unbalance the proportions with the other ingredients, so use a moderate amount.
Step 10
After adding the rice, stir in 1 tablespoon of oyster sauce for a glossy finish and savory depth. If you don’t have oyster sauce, you can substitute by mixing 1/3 Tbsp soy sauce, 1/3 Tbsp mirin, and 1/3 Tbsp sugar. Oyster sauce is a magical ingredient that elevates the flavor of dishes, so it’s very useful to have on hand!
Step 11
Here’s the secret weapon that makes this fried rice extra special: 1 tablespoon of butter! You can use regular butter for spreading on toast, or cooking butter. Adding butter deepens the flavor and richness of the fried rice, making it truly delicious.
Step 12
Finally, add the butter and mix everything thoroughly, ensuring each grain of rice is coated. Stir-fry until well combined, and your delicious Tuna Egg Fried Rice is ready! With simple steps and a few key flavor enhancers, anyone can create a fantastic meal. Enjoy!
