Cooking Instructions
Step 1
Here’s a great tip for easily peeling kabocha squash! Use a vegetable peeler (like for potatoes) and glide it over the skin; it comes off effortlessly. For the seeds and pulp inside, a spoon works best for scooping them out.
Step 2
Chop the onion into large pieces. Lightly heat a pan without oil, then add the onions and sauté until they become translucent. (You can use a little cooking oil if you prefer.)
Step 3
Once the onions release their sweet aroma, add the potatoes, kabocha squash, and sweet potato. Sauté them together for a short while, just until they begin to soften slightly. This sautéing step deepens the curry’s flavor.
Step 4
I had some chestnuts, so I added them in as well. Chestnuts add a pleasant chewiness and a subtle sweetness that complements the curry beautifully.
Step 5
Pour in enough water to cover the vegetables and bring to a boil. Cook until the vegetables become tender. They should be easily pierced with a fork.
Step 6
When the kabocha squash is tender yet still slightly firm, add the bell peppers for color and texture, along with the fragrant shiitake mushrooms. Simmer for a little longer. Be careful not to overcook, as the vegetables can become mushy.
Step 7
Now, add the solid curry roux and stir until it dissolves and the curry thickens. Once it reaches your desired consistency, turn off the heat. Serve generously over a bowl of warm rice to complete your delicious curry rice bowl! Finally, garnish with finely chopped wild chives for a fresh, aromatic finish, making your curry rice bowl even more special. You can create such a deep and flavorful curry dish with just vegetables, no meat needed!
