Hearty and Delicious Zucchini Gochujang Stew
Super Simple Zucchini Gochujang Stew Recipe Made in a Rice Cooker
Easily and quickly make a flavorful zucchini stew using your rice cooker and vegetables from your fridge. This stew has a magical taste that will make you want to finish a whole bowl of rice!
Main Ingredients- 250g Zucchini (about half a medium one)
- 1 medium Potato
- 1/4 medium Onion
- 2 dried Shiitake Mushrooms
- 1 Tbsp Dried Anchovy Powder
- 250ml Water (1 mugful)
- 1 handful Chopped Green Onion
Seasoning Ingredients- 1 Tbsp Gochujang (Korean chili paste)
- 1/3 Tbsp Doenjang (Korean soybean paste)
- 1 tsp Garlic Powder
- 0.5 Tbsp Soy Sauce (for soup)
- 1/3 tsp Red Pepper Flakes
- 1 Tbsp Gochujang (Korean chili paste)
- 1/3 Tbsp Doenjang (Korean soybean paste)

Cooking Instructions
Step 1
Pour 250ml of water (about 1 mugful) into the inner pot of your rice cooker. Add 1 Tbsp of dried anchovy powder and the 2 dried shiitake mushrooms, sliced into bite-sized pieces. Adding the mushrooms first helps to enrich the broth and allows them to rehydrate.
Step 2
In a separate bowl, combine 1 Tbsp gochujang, 1/3 Tbsp doenjang, 0.5 Tbsp soy sauce, 1/3 tsp red pepper flakes, and an additional 1 Tbsp of dried anchovy powder. Mix these seasoning ingredients thoroughly until the gochujang and doenjang are well dissolved. This creates your flavorful seasoning paste.
Step 3
Peel the potato and cut it into small, diced cubes that are easy to eat in a stew. Cutting them into bite-sized pieces is recommended, as larger chunks will take longer to cook.
Step 4
Peel the onion and dice it into pieces similar in size to the potatoes. The onion will add a natural sweetness and depth of flavor to the stew, making it even more delicious.
Step 5
Add all the diced potato and onion to the rice cooker pot. Pour the prepared seasoning paste over the water and vegetables. Select the ‘Reheat’ function on your rice cooker and cook for 9 minutes. Cooking the potatoes and onions first helps them soften and break down, enriching the broth.
Step 6
Once the potatoes and onions are partially cooked, add the sliced 250g of zucchini and the handful of chopped green onions. Stir gently to combine all the ingredients. Then, select the ‘Reheat’ function on your rice cooker again and cook for another 9 minutes. Zucchini can become mushy if overcooked, so adding it towards the end is best.
