Ingredients

  • 3 eggs
  • 50g cabbage
  • 2 sprigs crown daisy
  • 2cm zucchini
  • 1cm carrot
  • 300ml anchovy-kelp broth
  • 1 Tbsp soy sauce for soup
  • 2/3 Tbsp fish sauce

Cooking Instructions

Crack 3 eggs into a bowl. We’re preparing a generous portion to serve as a satisfying meal replacement.

Finely mince the cabbage. Chopping it finely will ensure it becomes tender when cooked, making it more enjoyable.

Finely mince the zucchini and carrot to a similar size as the cabbage. Wash the crown daisy, trim the stems, and finely chop the leaves.

Add the minced cabbage, zucchini, carrot, and crown daisy to a microwave-safe dish. Using a ceramic or glass container is recommended for microwave cooking.

Prepare anchovy and kelp broth by simmering them together. (If you don’t have this, store-bought broth or water can also be used.)

Pour 300ml of the prepared anchovy-kelp broth into the dish with the eggs. It’s okay if the broth is hot; using hot broth can shorten the cooking time.

Using a whisk, gently stir the eggs, minced vegetables, and broth in the dish until well combined. Ensure there are no lumps and everything is evenly mixed.

Add 2/3 Tbsp of fish sauce for seasoning. You can substitute this with soy sauce if preferred.

Add 1 Tbsp of soy sauce for soup. (I initially planned to use 2/3 Tbsp but adjusted to 1 Tbsp after tasting. Feel free to adjust to your preference.)

Gently stir again to ensure all seasonings are evenly distributed throughout the egg mixture and vegetables. Be careful not to overmix.

Cover the dish with a plate, leaving a slight gap for steam to escape. Microwave for 7-8 minutes. Cooking time may vary depending on your microwave’s wattage. To check for doneness, gently press the center of the steamed egg. If it feels firm, it’s cooked. If it’s still wobbly, microwave for an additional 1-2 minutes.
