  • Eomuk noodles, 1 serving (approx. 150g)
  • Thinly sliced beef for bulgogi, 1/2 cup (approx. 50g)
  • 1/4 onion, thinly sliced
  • 5 oyster mushrooms, trim ends and tear into bite-sized pieces
  • 1/4 green garlic stems, finely chopped (for garnish)
  • Water, 500ml
  • Store-bought mentsuyu (noodle dipping sauce), 50ml (adjust to taste)

Cooking Instructions

First, let’s prepare the delicious udon broth. In a pot, combine 500ml of fresh water and 50ml of store-bought mentsuyu, mixing well. Bring it to a simmer over medium heat, then reduce to low heat and let it gently cook.

Now, it’s time to prepare the star of the udon: the noodles. Carefully add the eomuk noodles to a pot of boiling water. Use chopsticks to gently separate them so they don’t stick together while cooking for about 1-2 minutes. Once cooked, drain the noodles and rinse them under cold water. Drain them well in a colander. This process will make the noodles delightfully chewy and firm.

Next, we’ll sauté the beef and onions that will go into the udon. Heat a pan over medium heat. Add the 1/2 cup of thinly sliced bulgogi beef and the 1/4 sliced onion. Sauté them together until the beef is browned and the onions are softened and fragrant. Stir-frying until the onions become translucent and release their sweetness is recommended for a richer flavor.

Carefully add the pre-cooked eomuk noodles to the prepared udon broth. Once the broth returns to a simmer, add a few of the torn oyster mushrooms. Continue to simmer for a little longer until the mushrooms are tender. This will further enhance the depth of the broth’s flavor.

We’re almost done! In a serving bowl, place the sautéed beef and onions. Gently pour the hot udon broth and eomuk noodles over them. Finally, sprinkle the finely chopped green garlic stems on top for a beautiful presentation and added flavor.
