As my middle school daughter started a diet for her health, I began making nutritious meals packed with vegetables. I also felt the need to manage my own health as I get older. So, I’ve been exploring various chicken breast recipes and dishes suitable for my daughter who can’t drink regular milk. This frittata is wonderfully smooth and satisfying for breakfast, making it a perfect single meal. Plus, it’s incredibly convenient to make in a frying pan without needing an oven!

Main Ingredients
  • 1 cooked chicken breast (approx. 150-200g)
  • 5 fresh eggs
  • 4-5 sprigs spinach (approx. 100g)
  • 1/4 onion
  • 5 cherry tomatoes
  • 30g broccoli
  • 100ml milk
  • A small amount of king oyster mushroom
  • A small amount of bell pepper (various colors)
  • 30g cooked macaroni
  • 1-2 packs pizza cheese (to taste)

Cooking Instructions

Step 1

First, wash the spinach thoroughly under running water. Remove the root ends and chop into bite-sized pieces, about 2-3 cm long. Cutting them too long can make them difficult to cook evenly, so aim for a manageable size.

Step 2

Boil the macaroni in water with a pinch of salt. It’s best to cook it a minute or two longer than the package instructions suggest for a softer texture. Boil for about 10 minutes, then rinse under cold water and drain well.

Step 3

In a large bowl, crack the 5 fresh eggs. Add 100ml of milk and a pinch of salt. Whisk gently with a fork or whisk, breaking up the egg yolks and blending everything until smooth. Ensure the milk and eggs are well combined.

Step 4

Shred the cooked chicken breast along its grain. Shredding it into manageable pieces, rather than finely mincing, will help retain a better texture.

Step 5

Prepare the vegetables. Peel and thinly slice the onion. Halve the cherry tomatoes. Break the broccoli into small florets. Chop the bell pepper and king oyster mushroom into small, bite-sized pieces. Cutting the vegetables small ensures they are evenly distributed and cook well within the frittata. All your ingredients are now prepped!

Step 6

Now, let’s start cooking. Get a frying pan with a lid and add a thin layer of cooking oil to coat the bottom. Heat the pan over medium-low heat. Add the sliced onion, prepared broccoli, king oyster mushrooms, and bell peppers. Sprinkle with a pinch of salt for seasoning and sauté for about 3-4 minutes until the vegetables become translucent and tender.

Step 7

Once the vegetables are partially cooked, add the spinach and stir-fry briefly. Spinach wilts quickly, so cook for only about 1 minute. As soon as the spinach has wilted but still retains some color, add the shredded chicken breast and halved cherry tomatoes. Gently mix everything together. Be careful not to overcook the spinach, as it can release too much water and become mushy.

Step 8

Pour the egg and milk mixture evenly over the vegetables and chicken in the pan. Initially, keep the heat at medium-low and gently stir with chopsticks or a spatula to ensure the ingredients are well incorporated into the egg mixture. Once the eggs begin to set slightly, reduce the heat to low. Cooking on high heat can burn the outside while leaving the inside undercooked.

Step 9

Once the egg mixture has partially set and started to firm up, sprinkle the pizza cheese generously over the top of the frittata. You can adjust the amount of cheese according to your preference. More cheese makes it even richer and more delicious!

Step 10

Cover the frying pan tightly with its lid and cook over very low heat. It’s crucial to ensure the frittata cooks through to the center. If you have an opaque lid, it might be difficult to check the progress, so a transparent lid is very helpful.

Step 11

Cook for about 20 minutes, or until fully cooked. Because heat distribution can vary, periodically check inside the lid to ensure the frittata isn’t burning, adjusting the heat as needed. You can test for doneness by inserting a chopstick; if it comes out clean without any wet egg mixture, it’s ready. Enjoy your delicious chicken breast frittata while it’s warm!
