Main Salad Ingredients

  • Whole wheat fusilli pasta 120g
  • 2 large fresh eggs
  • 50g carrot
  • 35g broccoli

Special Pasta Sauce

  • 30g (5 Tbsp) extra virgin olive oil
  • 16g (2 Tbsp) balsamic vinegar
  • 10g (1 Tbsp) chili sauce
  • 10g (1 Tbsp) sugar (adjust to taste)
  • 1 Tbsp lemon juice
  • 8g (1/2 Tbsp) ketchup
  • 20g (1 Tbsp) minced garlic
  • 20g (2 Tbsp) grated Parmesan cheese

Cooking Instructions

Step 1

First, place the eggs in a pot and boil them until they are fully cooked. After boiling, rinse them under cold water to cool; this makes peeling much easier.

Step 1

Step 2

Wash the carrot thoroughly, peel it, and then dice it into small, bite-sized cubes. This uniform cut ensures it mixes well with other ingredients.

Step 2

Step 3

Wash the broccoli under running water. Cut it into florets similar in size to the diced carrot. You can also use the stem; peel it and chop it finely.

Step 3

Step 4

Once the boiled eggs have cooled, peel them and chop them into cubes roughly the same size as the prepared carrots and broccoli. This uniformity enhances the salad’s overall texture.

Step 4

Step 5

In a pot, bring plenty of water to a boil. Add the prepared carrots and broccoli and blanch for about 2 minutes. This keeps the vegetables crisp-tender.

Step 5

Step 6

Remove the blanched vegetables from the boiling water. Add the whole wheat pasta to the same water and cook for about 11 minutes, or 1 minute less than the package instructions suggest. You can reserve some pasta water to adjust the sauce if needed.

Step 6

Step 7

In a small bowl, combine all the sauce ingredients: olive oil, balsamic vinegar, chili sauce, sugar, lemon juice, ketchup, and minced garlic. Whisk them together with a whisk or fork until well combined to create your delicious homemade dressing.

Step 7

Step 8

In a large bowl, combine the cooked whole wheat pasta, blanched vegetables, and diced hard-boiled eggs. Pour the prepared special sauce over everything. Ensure all ingredients are ready to be mixed with the dressing.

Step 8

Step 9

Gently toss all the ingredients together in the bowl until well combined. Be careful not to overmix, as this can cause the ingredients to break apart. A gentle toss is key for the best texture.

Step 9

Step 10

Finally, sprinkle grated Parmesan cheese over the top as desired. This adds an extra layer of savory flavor, making your whole wheat pasta salad even more delicious. Enjoy your meal!
