A Wholesome Beef Tendon Soup Recipe for the Whole Family
Beef tendon, known for its rich calcium content, is highly recommended for growing teenagers and the elderly, making this soup an ideal nourishing meal. As the weather gets warmer, cooking time-intensive dishes can become challenging. However, preparing a large batch of this soup in advance and freezing it means you’ll always have a hearty option ready, perfect for busy days or as a special, healthy meal for your family during the summer heat.
Ingredients- 1kg Beef tendon (Dogani)
- 1 large white part of leek
- 1 whole head of garlic
- Water (plenty)
Seasoning- 0.5 Tbsp whole black peppercorns
- 0.5 Tbsp whole black peppercorns
Cooking Instructions
Step 1
Begin by soaking the beef tendon in cold water for about 2 hours to remove any blood. This step is crucial for a clean and less gamey flavor. Once the blood is removed, place the tendon in a pot and cover it with enough cold water to fully submerge. Bring it to a boil over high heat. As impurities and scum rise to the surface, skim them off and discard. This process helps to clean the tendon.
Step 2
After blanching, rinse the beef tendon thoroughly under cold running water. Return the cleaned tendon to the pot and add water, approximately 3 times the volume of the tendon. Start by boiling over high heat for about 30 minutes. Once it comes to a rolling boil, reduce the heat to low, cover the pot, and let it simmer gently for about 3 hours, or until the tendon is very tender. During the simmering process, periodically skim off any foam, rendered fat, or debris that floats to the surface. This ensures a clear and refined broth. Once the tendon is cooked to perfection and tender, cut it into bite-sized pieces.
Step 3
Arrange the cut beef tendon pieces in serving bowls. Ladle the hot, simmering broth over the tendon. Garnish with the sliced white parts of the leek. Season with salt and whole black peppercorns to your taste. This prepared Dogani Tang is wonderfully warm and satisfying. It’s an excellent nourishing dish for the whole family, perfect for warming up on cooler days or for replenishing energy.
