Autumn radishes are said to be more beneficial than ginseng, making them a true tonic. To enjoy plenty of this delicious fall radish, we’re making a hearty beef and radish soup today. This soup is perfect for the changing season.
Ingredients- Beef (for soup) 200g
- Autumn radish 1/4 (approx. 300g)
- Green onion (generous amount)
- 1 Tbsp minced garlic
- 1 Tbsp soup soy sauce
- 1 Tbsp sesame oil
- Pinch of coarse salt
Cooking Instructions
Step 1
Let’s introduce the Beef and Radish Soup. It’s a comforting dish perfect for cooler weather.
Step 2
First, peel the radish and cut it into bite-sized cubes, about 1.5cm thick. Cutting it slightly thicker will prevent it from breaking apart too much during cooking.
Step 3
Heat 1 Tbsp of sesame oil in a large pot over medium-high heat. Add the beef and stir-fry until the surface is browned. This seals in the juices and enhances the flavor. Then, add the diced radish and sauté until it becomes translucent, about 3-5 minutes.
Step 4
Once the radish starts to turn translucent, add 1 Tbsp of minced garlic and stir-fry for about 30 seconds until fragrant. Pour in 1.5L (6 cups) of water and bring to a boil over high heat. Once boiling, reduce the heat to medium, cover, and simmer for about 15-20 minutes, or until the radish is tender. Soft radish is key to a refreshing soup broth.
Step 5
When the radish is tender, add 2 Tbsp of soup soy sauce for seasoning. Then, add a generous amount of chopped green onions.

Finally, taste the soup and adjust the seasoning with coarse salt if needed. Coarse salt adds a deeper, cleaner flavor. You can also add a pinch of black pepper if you like.
