How to Make Delicious Beef Short Rib Soup: The Secret to a Clear and Invigorating Broth!
A nutritious and comforting soup that the whole family can enjoy! I’ll share my recipe for making a delicious and clear beef short rib soup (Galbitang). Perfect for a healthy and satisfying meal.
Beef Short Rib Soup Ingredients (Serves 2-3)- 800g beef short ribs
- 2.5L water
- 1 large leek
- 7-8 pieces dried kelp (dashima)
- 2 Tbsp fish sauce (for umami)
- 1.5 Tbsp soy sauce for soup (guk-ganjang)
- 0.5 Tbsp MSG (Dasida) for enhanced flavor
- 1 egg
- A little chopped green onion for garnish
- Soaked glass noodles, as needed
- 3 pieces of radish

- 30ml cooking wine (mirin or sake)
- 20 whole black peppercorns
- 4-5 bay leaves

Cooking Instructions
Step 1
First, and most importantly, soak the beef short ribs in cold water to remove any blood. We recommend soaking for at least 1 hour, or until the water runs clear. Removing the blood thoroughly will ensure a clean-tasting and clear broth.
Step 2
Before boiling the ribs, trim off any excess fat or membrane attached to the short ribs. This step will result in a lighter, cleaner broth and a more appealing presentation.
Step 3
Place the drained short ribs in a pot, cover them with water, and add the ingredients for removing gamey smells: minced garlic, cooking wine, whole peppercorns, and bay leaves. Boiling them briefly in this mixture will effectively remove impurities and unwanted odors.
Step 4
Once the water comes to a rolling boil, continue to boil over high heat for about 3 more minutes. This helps to extract any remaining impurities. Skim off any scum or foam that rises to the surface during this time for a clearer soup.
Step 5
After blanching for odor removal, rinse the beef short ribs thoroughly under running cold water. Place the cleaned ribs back into the pot and add 2.5 liters of fresh water to start building the delicious broth.
Step 6
Now, add the key ingredients for a clear and refreshing broth: the large piece of leek, dried kelp (dashima), and the radish pieces which add a wonderful sweetness and depth. Be mindful not to overcook the kelp, as it can sometimes impart a slightly bitter taste. It’s best to remove it after about 20-30 minutes of simmering.
Step 7
Once the ribs and vegetables have cooked a bit, season the soup for enhanced flavor. Add 2 tablespoons of fish sauce for umami, 1.5 tablespoons of soy sauce for soup (guk-ganjang), and 0.5 tablespoon of MSG (Dasida) for an extra boost of flavor. You can also adjust with salt to your preference.
Step 8
Cover the pot and let it simmer gently over low heat for at least 1.5 hours, or until the short ribs are tender and falling off the bone. If the liquid reduces too much during cooking, you can add a little warm water to maintain the desired broth consistency and rich flavor.
Step 9
As the Galbitang nears completion, carefully skim off any excess oil that has risen to the surface. Removing the oil is crucial for achieving that clean, light, and refreshing taste that defines a great Galbitang.
Step 10
While the soup is simmering, prepare the garnish. Lightly pan-fry the egg into a thin omelet, then julienne it into fine strips. This will add a beautiful color and a delicate texture to the finished dish.
Step 11
Remove the tender cooked radish from the soup and cut it into bite-sized pieces. Add these pieces back into the soup and simmer briefly. This allows the radish to absorb the savory broth, making it even more delicious.
Step 12
Prepare the glass noodles by soaking them in warm water until pliable. Then, quickly blanch them in boiling water just before serving. Overcooking can make them mushy, so a brief blanch is perfect. Place the noodles in your serving bowl.
