Cooking Instructions

Step 1

Today, we’re going to make a warm and refreshing Korean Beef and Radish Soup. This is a soul-satisfying broth that’s perfect with rice!

Step 1

Step 2

First, lightly pat the beef dry with paper towels and cut it into bite-sized pieces, about 2-3 cm. Peel the Korean radish and slice it thinly, about 0.5 cm thick. Slice the green onion diagonally. Heat 2 tablespoons of sesame oil in a pot over medium heat. Add the beef and stir-fry until it’s about half cooked. Then, add the sliced radish and stir-fry together with the beef for another 2-3 minutes until the radish becomes slightly translucent. This step helps to deepen the flavor of the soup.

Step 2

Step 3

After stir-frying the beef and radish, pour in 1 liter of water. You can also use rice water or any other broth for a richer flavor. Bring the soup to a boil over high heat. The amount of water can be adjusted based on the pot size and the amount of ingredients.

Step 3

Step 4

Once the soup starts boiling vigorously, use a spoon to skim off any foam or impurities that rise to the surface. This will ensure a clear and clean-tasting broth.

Step 4

Step 5

Reduce the heat to medium-low, cover the pot, and let it simmer for about 10-15 minutes, or until the radish is tender and translucent. Once the radish is cooked, add 1 tablespoon of minced garlic, 2 tablespoons of soy sauce for soup (Gukganjang), 1 teaspoon of salt (or salted shrimp), and a pinch of black pepper. Season to your taste. Be mindful not to add too much Gukganjang initially, as it can make the soup cloudy. Adjust the remaining seasoning with salt or salted shrimp if needed. The minced garlic and black pepper will add depth to the flavor.

Step 5

Step 6

Finally, add the sliced green onions and let it simmer for another minute. Your delicious and refreshing Korean Beef and Radish Soup is ready! Enjoy it by pouring it over a bowl of hot rice. It’s also perfect for cold days or as a hangover remedy!
