This oyster rice soup boasts a wonderfully clear and refreshing broth that’s incredibly satisfying. It’s packed with the goodness of oysters, which are known for their health benefits, and it’s surprisingly simple to make. Give this comforting dish a try!
Main Ingredients- 250g fresh oysters, cleaned
- 2 large eggs
- A small handful of dried anchovies for broth (about 1/4 cup)
- Chopped green onions, for garnish

Cooking Instructions
Step 1
First, let’s create the flavorful base for our oyster soup. In a pot, bring a generous amount of water to a boil. Add the dried anchovies and simmer for about 5 minutes to create a clear broth. Be careful not to over-boil, as it can make the broth bitter. Remove the anchovies and reserve the clear broth.
Step 2
Next, prepare the oysters. Gently rinse the fresh oysters under cold running water. Carefully remove any debris or shell fragments attached to the oysters. Drain them thoroughly in a colander. If the oysters are large, you can cut them in half.

Now, add the cleaned oysters to the clear anchovy broth and bring it to a simmer over medium heat. Once the oysters start to float and cook, gently pour in the beaten eggs in a thin stream around the edges of the pot. Stir gently to create delicate egg wisps, known as ‘juran’.

Finally, add the chopped green onions to the soup. Season with salt (or Korean soup soy sauce, ‘gukganjang’) to your preference. A pinch of black pepper at the end will enhance the aroma and flavor. Taste and adjust the seasoning as needed, adding more salt for brininess or a touch of gukganjang for depth.
