Hearty and Refreshing Ugeoji Doenjang Guk (Dried Cabbage Soybean Paste Soup)
A Rich Ugeoji Doenjang Guk Made with Leftover Pork Broth!
Don’t discard the broth from boiling pork! Transform it into a flavorful Ugeoji Doenjang Guk by simply skimming off the excess fat. This soup is perfect as a hangover remedy or a hearty, satisfying meal. Using frozen dried cabbage makes it easy to prepare, and adding leftover pork makes it even more abundant.
Main Ingredients- 3L Broth leftover from boiling pork
- 200g Frozen dried cabbage (outer cabbage leaves)
- 2 Cheongyang chili peppers
- 1/2 Green onion
- A little leftover pork (optional)
Seasoning- 2-3 Tbsp Doenjang (Korean soybean paste, adjust to taste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Minced garlic
- Salt to taste
- A pinch of black pepper

Cooking Instructions
Step 1
Pour the leftover pork broth into a pot and strain it through a fine-mesh sieve to make it clear. Carefully skim off any fat floating on the surface. If the broth volume is too low, add some water to reach approximately 3L. Lightly squeeze out excess water from the thawed frozen dried cabbage.
Step 2
Bring the prepared broth to a rolling boil over high heat. Once boiling, add the thawed dried cabbage, cut into bite-sized pieces. If you have leftover pork, shred or finely chop the lean meat and add it to the pot. (Don’t worry if you don’t have leftover pork; it will still be delicious with just the cabbage!)
Step 3
Finely chop the Cheongyang chili peppers after removing the seeds, and slice the green onion diagonally. Add the chopped chili peppers and green onion to the pot, along with the gochugaru and minced garlic. Dissolve the doenjang and season the soup. (Adjust the amount of doenjang based on its saltiness.)
Step 4
Taste the soup and adjust the seasoning with salt if needed. Finally, add a pinch of black pepper for extra flavor.
Step 5
Simmer for a few more minutes until all the ingredients are well combined and the soup is ready.
