Hearty and Refreshing Winter Oyster Soup (Gulguk)
A Fantastic Combination of Fresh Seasonal Oysters and Sweet Winter Radish
Enjoy a fulfilling meal by adding a bowl of hot rice to this oyster soup, transforming it into Gukbap (soup with rice)! The secret to this Gukbap is the wonderfully clear and refreshing broth made from sweet winter radish and the freshest seasonal oysters. The rich flavor of oysters and the coolness of winter radish create an incredibly invigorating soup. Served with crisp, homemade kimchi, this dish is perfect for a satisfying meal.
Ingredients- Winter Radish (Moo) – 2 handfuls (approx. 300-400g)
- Fresh Oysters – 1 cup (approx. 150g)
- Kelp and Anchovy Broth (Dashima Myeolchi Yuksu) – 5 cups (1L)
- Clear Anchovy Sauce (Myeolchi Aekjeot) – 1 Tbsp
- Egg – 1
- Green Onion (Scallion) – 1 stalk
Cooking Instructions
Step 1
First, thoroughly wash the winter radish, peel it, and slice it into approximately 0.3-0.5cm thick pieces. Then, cut these into bite-sized squares. Place 2 handfuls of the prepared radish into a pot.
Step 2
Prepare 1 cup of fresh oysters. If there are any hard shell pieces attached to the oyster muscle, carefully remove them with your fingers. Rinse the oysters gently in a bowl of water, swishing them lightly to remove any grit or debris. Repeat this rinsing process about twice until clean. Drain the oysters well and set aside.
Step 3
Add the rinsed and drained fresh oysters to the pot containing the sliced winter radish.
Step 4
Pour in 5 cups (1L) of the prepared kelp and anchovy broth. Ensure the ingredients are well submerged.
Step 5
Add 1 tablespoon of clear anchovy sauce to season the soup and enhance its umami flavor. Now, bring it to a boil.
Step 6
As the soup starts to boil, carefully skim off any foam that rises to the surface. Initially, bring it to a rolling boil over high heat, then reduce the heat to medium-low. Let it simmer gently, allowing the flavors to meld and the radish to become tender and translucent.
Step 7
Once the broth has developed a good flavor, slice 1 green onion stalk diagonally and add it to the pot. Let it simmer for a short while longer to infuse its fresh aroma.
Step 8
Finally, crack 1 egg into a separate bowl and whisk it gently. Slowly drizzle the beaten egg into the simmering soup in a circular motion. Stir the soup gently with chopsticks or a ladle to prevent the egg from clumping, resulting in a smooth and delicious oyster soup.
