Today, I’m sharing a recipe for Fried Tofu Miso Soup that’s simple yet rivals the best miso soups out there! It’s incredibly easy to make and very budget-friendly (just around 800 won for the tofu!). But the taste… wow. The moment you take a spoonful of the mild miso broth with a piece of tender fried tofu, the burst of flavor is simply divine! It’s truly one of the best comfort foods.

Ingredients
  • 60g frozen fried tofu (aburaage), cut into bite-sized pieces
  • 6cm segment of green onion
  • 3 cloves garlic
  • 2 tablespoons miso paste
  • 1 tablespoon dashi granules (or soy sauce for soup)
  • 6 cups water (approx. 1.2L)

Cooking Instructions

Step 1

First, prepare all the ingredients for today’s dish. Gathering fresh ingredients is the first step to a delicious meal.

Step 2

In a pot, add 6 cups of water (about 1.2L) and dissolve 2 tablespoons of miso paste thoroughly. The color of the miso might seem light, but this is intentional to create a mild and deep broth as it simmers with the natural flavors of the ingredients. Don’t worry! You can adjust the amount of miso paste to your preference.

Step 3

Cut the frozen fried tofu into bite-sized pieces, about three per piece. Finely mince the garlic cloves or slice them thinly. Chop the green onion into small pieces. Properly preparing the ingredients helps to extract more flavor into the soup.

Step 4

Before the water boils, add the prepared fried tofu, minced garlic, chopped green onion, and 1 tablespoon of dashi granules to the pot. Adding all ingredients together from the start allows their flavors to meld harmoniously, creating a richer taste. If you don’t have dashi granules, soy sauce for soup can be a good substitute.

Step 5

Now, controlling the heat is key. First, bring the soup to a boil over high heat for about 10 minutes to allow the flavors to infuse fully. Then, reduce the heat to medium and simmer for another 3 minutes. In total, simmering for about 13 minutes will result in tender fried tofu and a deeply savory, aromatic broth.
