Main Ingredients- 1/2 head of Napa cabbage (or regular cabbage)
- 1/2 onion
- 1 stalk of green onion
- 2 liters of anchovy and kelp broth
Seasonings- 3 Tbsp soybean paste (doenjang)
- 1 Tbsp red pepper paste (gochujang)
- 2 Tbsp mirin (rice wine)
- 2 Tbsp soup soy sauce (guk-ganjang)
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
Select the tender inner leaves of the Napa cabbage, wash them thoroughly under running water, and drain. Prepare the onion by thinly slicing it, and the green onion by slicing it diagonally.
Step 2
First, make a flavorful broth by simmering anchovies and kelp. Prepare your soybean paste and red pepper paste by either mixing them together or having them ready to dissolve in the broth.
Step 3
Add the prepared Napa cabbage to the vigorously boiling anchovy and kelp broth. Cook until the cabbage wilts and becomes tender.
Step 4
Once the cabbage has softened a bit, add the red pepper paste first and stir well to dissolve it completely. This helps to achieve a clearer broth.

After the red pepper paste is dissolved and the stew has simmered briefly, take a small amount of the broth and mix it thoroughly with the soybean paste in a separate bowl to create a smooth paste. Then, add this mixture to the pot and simmer for about 20 minutes on low heat, allowing the flavors to meld.

When the cabbage becomes more than half transparent and tender, add the thinly sliced onion and 1 tablespoon of minced garlic. Continue to simmer for about 15 minutes, letting the ingredients’ flavors combine.
