Easy and Delicious Pork Cheonggukjang Stew Recipe at Home

Stew Ingredients
- Cheonggukjang powder 80-100g (adjust to taste)
- 1 fresh potato
- 1 sweet onion
- 1/2 stalk green onion
- 300g tender pork (front leg cut)
- 1/2 piece aged kimchi
- 2 spicy green chili peppers
- 1/2 block firm tofu
- A small amount of king oyster mushrooms
- 1 Tbsp minced garlic
- 1 Tbsp anchovy sauce (fish sauce)
- 600-700g clear anchovy broth (rice water can be used as a substitute)
Cooking Instructions
Step 1
First, prepare the vegetables. Dice the potato, onion, and king oyster mushrooms into bite-sized cubes. Finely chop the green onion and green chili peppers. Cut the tofu into squares, and chop the aged kimchi into manageable pieces. Prepping the ingredients like this will make the cooking process much smoother.
Step 2
Heat a pan with a little cooking oil and add the pork. Stir-fry over high heat. It’s important to stir-fry the pork thoroughly until the surface turns golden brown, locking in the juices.
Step 3
Once the pork is golden brown, add the chopped onion and aged kimchi, and stir-fry together. At this point, adding 1 tablespoon of minced garlic will enhance the flavor even further. Cook until the kimchi softens and the seasonings are well incorporated.
Step 4
When the kimchi is tender, pour in the prepared anchovy broth (or rice water). Add enough broth to cover the meat and kimchi generously. Bring to a boil over high heat, then reduce to medium-low heat and simmer.
Step 5
As the broth starts to bubble, add the star ingredient: cheonggukjang powder. The amount of cheonggukjang powder should be adjusted according to your preference. Add generously for a richer, thicker stew, or a bit less for a milder flavor, tasting as you go.
Step 6
Immediately after adding the cheonggukjang, add the diced potato and king oyster mushrooms. Let it simmer for a while to allow all the ingredients to meld together. The stew’s flavor will deepen as the potatoes start to cook.
Step 7
Finally, add the cubed tofu, green chili peppers, and green onion, and simmer briefly to finish. Gently mix to avoid breaking the tofu. Enjoy your delicious pork cheonggukjang stew with a warm bowl of rice!
