Simple Recipe for Dumpling Egg Drop Soup
Introducing a recipe for a quick and easy dumpling egg drop soup that can be made in a flash. This soup features a delightful combination of soft egg and chewy dumplings, with a clear and refreshing broth that soothes the stomach. It’s perfect to enjoy with kimbap or as a light breakfast.
Main Ingredients- 20 frozen dumplings (mandu)
- 1/2 medium onion
- 1 stalk green onion
- 2 large eggs
- 1/2 Tbsp minced garlic
- 4 cups (800ml) anchovy-kelp broth
- Pinch of salt
- Pinch of black pepper
- Pinch of sesame seeds
Cooking Instructions
Step 1
First, prepare the frozen dumplings. Finely chop the green onion and thinly slice the onion. Crack the 2 eggs into a bowl and beat them gently with a fork or whisk, making sure to break up the egg whites (al-kkeun). Avoid over-whisking to keep the broth clear and achieve a tender texture for the eggs.
Step 2
Pour the 4 cups (800ml) of anchovy-kelp broth into a pot and bring it to a boil over medium-high heat. Once the broth is boiling vigorously, add the thinly sliced onion and 1/2 Tbsp of minced garlic. Simmer for 1-2 minutes until the onion becomes translucent; this will add a sweeter and deeper flavor to the broth.
Step 3
When the broth comes back to a boil, carefully add the 20 frozen dumplings. It’s a good idea to gently stir them to prevent them from sticking together.
Step 4
Boil for about 3-4 minutes, or until the dumplings are cooked through and float to the surface. They will puff up and float when they are ready. Maintain medium heat during this step to avoid the dumplings bursting.
Step 5
Once all the dumplings have floated and are cooked, slowly drizzle the beaten eggs in a circular motion around the edges of the pot. Wait about 30 seconds without stirring, allowing the eggs to begin setting. Then, gently stir with chopsticks to create soft ribbons of cooked egg.
Step 6
When the eggs are cooked into soft curds, add the chopped green onions and bring the soup to a brief boil again. As soon as it starts to bubble up, turn off the heat. Overcooking can make the green onions lose their crispness and make the broth cloudy.
Step 7
Finally, season the soup with salt to your taste. For an extra touch, you can add a pinch of freshly ground black pepper and a sprinkle of sesame seeds.
