Main Ingredients
- Beef bone broth 6 cups (1.2L)
- Radish (Daikon) 250g
- Scallion (white parts) 15cm

- Soup soy sauce 2/3 Tbsp

Cooking Instructions
Step 1
First, wash the radish and peel off its outer skin. Cut it into 2cm thick slices, then into approximately 3cm square, flat pieces. Slice the scallion diagonally, focusing on the white parts.

Pour the 6 cups (1.2L) of beef bone broth into a pot and add the prepared radish. Bring it to a boil over high heat.
Step 3
Once the broth comes to a rolling boil, reduce the heat to medium-low. Add 1 Tbsp of minced garlic and some ground black pepper. Cover the pot and let it simmer until the radish is tender, which should take about 10-15 minutes. You can test the tenderness by piercing the radish with a chopstick; it should go in smoothly.
Step 4
Check if the radish is fork-tender. Stir in 2/3 Tbsp of soup soy sauce for seasoning. Adjust the taste further with salt as needed, according to your preference.
