Main Ingredients- Beef (for bulgogi) 600g
- Shiitake mushrooms 200g
- 1 Onion (medium)
- 1/2 Carrot (medium)
- 2 Scallions
Seasoning Ingredients- 8 Tbsp Soy sauce
- 3 Tbsp Corn syrup
- 3 Tbsp Minced garlic
- 1 Tbsp Mirin (or cooking wine)
- 2 Tbsp Sugar
- Pinch of Black pepper
- 1 Tbsp Sesame oil
- 2 Tbsp Toasted sesame seeds
- 1 Tbsp Plum extract (Maesilcheong)
- 8 Tbsp Soy sauce
- 3 Tbsp Corn syrup
- 3 Tbsp Minced garlic
- 1 Tbsp Mirin (or cooking wine)
- 2 Tbsp Sugar
- Pinch of Black pepper
- 1 Tbsp Sesame oil
- 2 Tbsp Toasted sesame seeds
- 1 Tbsp Plum extract (Maesilcheong)
Cooking Instructions
Step 1
First, prepare 600g of beef, thinly sliced for bulgogi. Place the beef in a large bowl. Add 3 tablespoons of minced garlic to the beef; the garlic helps to remove any gamey odors and enhances the flavor.
Step 2
Add 8 tablespoons of soy sauce to season the beef. Soy sauce is the fundamental seasoning for overall umami, so measure it accurately.

Add 1 tablespoon of mirin (or cooking wine) to tenderize the beef and eliminate any unpleasant smell. Don’t worry, the alcohol scent will evaporate as it cooks.

Add 3 tablespoons of corn syrup for a glossy finish and a subtle sweetness. You can substitute with rice syrup or oligodang if preferred.

Incorporate 1 tablespoon of plum extract (Maesilcheong) for a sweet and tangy flavor profile that enhances the overall taste of the ingredients. Plum extract acts as a natural umami booster.

Finish with 1 tablespoon of sesame oil for a nutty aroma. Sesame oil is sensitive to heat, so it’s best added towards the end of cooking to preserve its fragrance.

Add 2 tablespoons of toasted sesame seeds, 1 chopped onion, and 2 tablespoons of sugar. Generously sprinkle some black pepper for added flavor. Now, mix everything together with your hands, gently massaging the ingredients to ensure the marinade is evenly distributed. If the beef is clumped together, use chopsticks or your hands to separate the pieces while marinating. Let the marinated beef rest for a while to absorb the flavors.

Begin preparing the supporting vegetables. Cut the scallions into 3cm lengths. Slice the carrot into 0.5cm thick half-moons. Cutting vegetables into similar sizes ensures they cook evenly.

Trim the stems from the shiitake mushrooms and slice them thinly on an angle. Making about three star-shaped scores on the mushroom caps will make them visually appealing and help them absorb the sauce better.

Now, let’s start stir-frying. Place the marinated beef in a deep pan or pot. Add about 2 cups of water to create a lightly simmering broth. Add the sliced carrots and bring to a boil over high heat. Once boiling, reduce the heat to medium.
