Hearty Beef Brisket Soybean Paste Stew (Chadol Doenjang Jjigae)
Delicious and Comforting Beef Brisket Doenjang Jjigae

This Beef Brisket Doenjang Jjigae is a beloved dish that we make at least once a week. Everyone loves it so much! It’s a hearty and flavorful stew that’s perfect for any meal, offering a wonderfully savory and comforting experience.
Main Ingredients- 600g Beef Brisket (freshly sliced is recommended)
- 4 Tbsp Doenjang (Korean soybean paste)
- 1 medium Onion
- 1 stalk Green Onion
- A handful of dried Radish Greens (soaked beforehand)
- 1/2 block Firm Tofu
Seasoning & Others- 1/2 Tbsp Minced Garlic
- Salt (to taste)
- A pinch of Black Pepper
- 2 Tbsp Gochugaru (Korean chili flakes)

Cooking Instructions
Step 1
First, soak the dried radish greens (siraegi) in plenty of water for at least a few hours, or preferably overnight. If you soak them before bed, they’ll be perfectly ready by morning. Rinse the soaked greens thoroughly.

Step 2
It’s important to use fresh beef brisket. If you can get it freshly sliced from the butcher, it will make your doenjang jjigae even more delicious.

Step 3
In a pot, add 3 liters of water. Add the soaked and chopped radish greens. Dissolve 4 tablespoons of doenjang through a sieve into the water. Stir in 1/2 tablespoon of minced garlic, a pinch of salt, a pinch of black pepper, 2 tablespoons of gochugaru, and 1 sliced onion. Letting this base simmer for a bit will deepen the flavor of the stew.

Step 4
Once the broth comes to a boil, skim off any foam that rises to the surface using a ladle. This will make the stew clearer and cleaner. Then, add the beef brisket and let it simmer briefly. Skim off any foam that may appear from the beef as well.

Step 5
After the beef brisket is cooked, add the cubed tofu. Simmer until the tofu is tender and heated through. Once the tofu is cooked, turn off the heat. Be careful not to overcook the tofu, as it might break apart.

Step 6
Just before turning off the heat, add plenty of diagonally sliced green onions to add aroma. (Optional: You can add a bit of chopped cheongyang peppers or red chili peppers for extra spice.)

Step 7
