Main Ingredients- 60g fresh beef (thinly sliced)
- 1 bowl warm rice
- 1/4 sweet onion (thinly sliced)
- 1 stalk green onion (cut into 4cm lengths)
- 10g enoki mushrooms (remove base)
- 1 fresh egg
- 14 sheets of dried seaweed (crumbled into flakes)
- 1 piece of dried kelp (for broth)
- 10g katsuobushi (bonito flakes, for broth)
Cooking Instructions
Step 1
Let’s start by making the broth that will give this rice bowl its depth of flavor. In a pot, combine 2 cups (400ml) of water and 1 piece of dried kelp. Bring to a simmer over medium heat. Once the water begins to boil, remove the kelp. Add 10g of katsuobushi and let it simmer for another minute before turning off the heat. Once the katsuobushi has infused its flavor, strain the broth through a sieve to get a clear liquid.
Step 2
Prepare all your ingredients for easy cooking. Thinly slice the beef. Peel and thinly slice the onion into strips. Wash the green onions and cut them into 4cm lengths. For the enoki mushrooms, trim off the base and rinse them lightly under running water, then pat them dry.
Step 3
Let’s prepare the seasoning mixture that will add wonderful flavor to the rice bowl. In a small bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of sake (or mirin), 1/2 tablespoon of sugar, 1/2 teaspoon of minced garlic, and a pinch of black pepper. This balanced seasoning is the key to a delicious dish.
Step 4
Now it’s time to bring all the ingredients together and cook them. Pour the prepared broth back into the pot and bring it to a simmer. Once boiling, add the thinly sliced beef and cook until it changes color. Then, add the sliced onions, green onions, and enoki mushrooms, and continue to simmer. Once the ingredients are partially cooked, stir in the pre-mixed seasoning sauce and let it simmer briefly. Finally, beat 1 egg in a separate bowl and gently pour it into the pot in a swirling motion around the edges. Stir gently until the egg is cooked. Be careful not to over-stir, as this can break up the egg too much.
