Hearty Braised Mackerel

I took mackerel out of the freezer and made some braised mackerel to eat with lettuce wraps! It’s delicious on its own, but imagine how much more amazing it is wrapped in fresh lettuce! And the vegetables in the mackerel stew are incredibly tasty too. We enjoyed it immensely with lots of vegetables added! This recipe is perfect for a satisfying meal.

Ingredients

  • 1 mackerel
  • 8 pieces of radish
  • 1/2 onion
  • 1/4 zucchini
  • 1 potato
  • 1 stalk of green onion
  • 2 chili peppers (red or green)

Seasoning Sauce

  • 300ml water
  • 5 Tbsp soy sauce
  • 1/2 Tbsp doenjang (fermented soybean paste)
  • 0.5 Tbsp sugar
  • 3 Tbsp gochugaru (red chili flakes)
  • 1 Tbsp tuna extract (or fish sauce)
  • 1.5 Tbsp maesilcheong (plum extract)
  • 1 Tbsp minced garlic
  • 1/3 tsp ginger powder (or a little grated ginger)

Cooking Instructions

First, prepare all your vegetables. Cut the radish, potato, and zucchini into thick, bite-sized pieces, about fingernail width. Roughly chop the onion and diagonally slice the green onion. Slice the chili peppers diagonally as well. Rinse the mackerel thoroughly under running water, remove any scales and internal organs, and pat dry.

In a deep pot or wok, arrange the sliced radish, potato, and zucchini at the bottom. Place the prepared mackerel on top of the vegetables. Then, layer the remaining vegetables (onion, green onion, chili peppers) over the mackerel. Placing vegetables at the bottom helps prevent sticking and infuses the mackerel with their delicious flavors as they cook.

Now, let’s make the flavorful sauce. In a bowl, combine 300ml of water with 5 Tbsp soy sauce, 3 Tbsp gochugaru, 1/2 Tbsp doenjang, 0.5 Tbsp sugar, 1 Tbsp tuna extract, 1.5 Tbsp maesilcheong, 1 Tbsp minced garlic, and 1/3 tsp ginger powder. Mix well. Pour this seasoning sauce evenly over the ingredients in the pot. Cover with a lid and bring to a boil over high heat.

Once the stew begins to boil, reduce the heat to medium. While it simmers, uncover the pot and periodically spoon some of the broth over the mackerel and vegetables. This ensures the flavors are evenly distributed and keeps everything moist and tender.

Continue to simmer until the sauce has reduced to a nice, thick consistency and all the ingredients are tender. You can check if the radish and potatoes are cooked by piercing them with a chopstick; they should be easily penetrated. Taste and adjust seasoning if needed, adding a little more soy sauce for saltiness or sugar for sweetness. Your delicious braised mackerel is ready! Enjoy it with a bowl of hot rice.
