  • 0.5 cup cooking wine (mirin or rice wine)
  • 0.5 cup minced garlic
  • A pinch of black pepper
  • A drizzle of sesame oil
  • 1 finely chopped green onion

First, we’ll prepare the pork ribs by removing the blood. Soak the 2kg of pork ribs in cold water for at least 3 hours, changing the water every 30 minutes to 1 hour for optimal blood removal. (If you have a larger family, feel free to increase the quantity of meat.)

After soaking, briefly blanch the ribs in boiling water for 1-2 minutes to remove impurities. Then, rinse them thoroughly under cold water. You can also add a spoonful of soybean paste to the boiling water to help eliminate any unwanted odors.

Let’s make the delicious braising sauce. In a bowl, combine the soy sauce, sugar (or corn syrup), cooking wine, minced garlic, black pepper, sesame oil, and finely chopped green onion. Mix them well. (For an even richer flavor, you can add grated pear or apple.)

After mixing the sauce with the blanched ribs, let them marinate for at least 30 minutes before cooking. Allowing the sauce to deeply penetrate the meat will make the ribs incredibly tender and flavorful. Marinating overnight is even better.
