This is a delicious bulgogi quesadilla made with healthy whole wheat tortillas, generously filled with flavorful Costco-style bulgogi and fresh vegetables! Ingredients- Extra virgin olive oil, for cooking
- Salt, to taste
- Black pepper, to taste
- Italian herb mix, to taste
- Yellow bell pepper, 90g (thinly sliced)
- Red bell pepper, 80g (thinly sliced)
- Whole wheat tortillas, 4 sheets (La Casita brand recommended)
- Pre-marinated beef bulgogi (Costco brand recommended)
- Tomato and basil sauce (Sirio Chopped Tomatoes with Basil)
- Grated Parmesan cheese, for topping
Cooking Instructions
Step 1
Heat a skillet over medium heat and add a drizzle of extra virgin olive oil. Add the thinly sliced yellow and red bell peppers and sauté until they begin to soften. Season lightly with salt and pepper.

Sprinkle in the Italian herb mix for added aroma and cook for another minute. Transfer the sautéed vegetables to a separate bowl. Pre-cooking the vegetables enhances the flavor of the quesadilla.
Step 3
In the same skillet, add the pre-marinated beef bulgogi and cook until nicely browned and the marinade is well-distributed. Costco’s bulgogi is already seasoned, making it very convenient to use.

Warm a clean skillet over low heat. Place one whole wheat tortilla in the skillet and spread a thin, even layer of tomato and basil sauce over it. Be careful not to use too much sauce, as it can make the tortilla soggy.

Generously spread the cooked bulgogi over the sauced tortilla. Then, arrange the pre-sautéed bell pepper slices attractively on top of the bulgogi. Avoid overfilling, as this can cause the quesadilla to break apart.

Sprinkle grated Parmesan cheese evenly over the bulgogi and vegetables. The cheese will melt and help bind all the ingredients together.
