Main Ingredients

  • 1 handful of well-fermented kimchi (about 1 cup)
  • 1/4 onion (small size)
  • 1 handful of chicken meat (chicken breast or thigh, about 100g)
  • 1 egg
  • 1 bowl of cooked rice (warm)

  • 1 Tbsp plum extract (maesilcheong)
  • 1 Tbsp soy sauce
  • A little cooking oil
  • A pinch of sesame seeds

Cooking Instructions

Step 1

First, take a handful of kimchi, rinse it if you prefer a milder flavor, and chop it into bite-sized pieces. Peel and finely dice the 1/4 onion. Heat a little cooking oil in a frying pan over medium-low heat. Add the chopped kimchi and onion and stir-fry for about 2-3 minutes until the onion is softened and the kimchi is slightly translucent. If your kimchi is very tart, you can add a tiny pinch of sugar (about 1/2 tsp). Finally, stir in 1 Tbsp of plum extract to enhance the kimchi’s flavor and cook for another minute.

Push the stir-fried kimchi and onion to one side of the pan. Crack the egg into the empty space and scramble it until cooked through. Add 1 bowl of warm cooked rice to the pan. Drizzle 1 Tbsp of soy sauce evenly over the rice. Gently mix everything together with a spatula, incorporating the rice with the kimchi, onion, and scrambled egg. Continue to stir-fry for about 3-4 minutes until the rice grains are separated and all ingredients are well combined.

Prepare your handful of chicken meat. Thinly slice or dice the chicken (breast or thigh works well for tenderness) into small pieces. Add the prepared chicken to the fried rice and stir-fry until it is fully cooked through. Once the chicken is cooked, sprinkle a pinch of sesame seeds over the top for extra flavor and aroma.
