Cooking Instructions

Step 1

First, prepare the vegetables for the curry. You’ll need 2 onions, 2 medium-sized potatoes, 1/2 carrot, and 1/3 zucchini. Cutting the potatoes into large chunks makes them more enjoyable to eat and makes the curry look more appetizing. Try to cut all the vegetables into similarly large pieces so they cook evenly.

Heat 1-2 tablespoons of cooking oil in a deep pan or pot over medium heat. Add the chopped onions and sauté until they turn a light brown color. Instead of stirring constantly, try stirring occasionally after the onions start to brown slightly; this process, called caramelization, deepens their sweetness and flavor. Continue to cook until they have a nice, subtle brown hue.

Once the onions are well-sautéed, add the 300g of pork tenderloin and cook until the surface turns white. Add the firmer vegetables, potatoes and carrots, first and cook until the surface of the potatoes appears slightly translucent. Finally, add the zucchini and sauté for about 2 more minutes, allowing the residual heat to gently cook it.

Now, pour in 900ml of water into the pot. Bring it to a boil over high heat, then reduce to medium heat and simmer until the potatoes are completely tender. Covering the pot with a lid can help them cook faster.

As the curry simmers, foam may rise to the surface. Skimming off this foam will result in a cleaner-tasting broth. Gently remove it with a spoon or ladle.

Check if the potatoes are fully cooked by piercing them with a chopstick; they should be very tender. Once the potatoes are done, reduce the heat to low. Add the 6 solid curry blocks and stir well with a spatula or ladle to dissolve them, ensuring they don’t clump. Be careful to prevent the curry from sticking to the bottom of the pot. When the curry blocks are completely melted and well incorporated into the broth, stir in 1 tablespoon of ketchup. Continue to simmer gently, stirring occasionally, until the curry reaches your desired consistency. The ketchup adds a nice umami depth.
