Hearty Deopbap (Korean Rice Porridge) with Leftover Vegetables

A Versatile Deopbap Sauce Using Up Your Fridge Scraps!

To please my husband who loves ssam-bap (rice wrapped in lettuce), I made this deopbap sauce packed with all the leftover vegetables in my fridge! It’s perfect as a side dish for the whole week. ^-^

Main Ingredients
  • 3 Tbsp Doenjang (Korean soybean paste)
  • 1/2 Potato (small)
  • 1/2 Onion (small)
  • 2 Cheongyang peppers (Korean spicy peppers)
  • 1/2 Green onion
  • 1 King oyster mushroom
  • 1/2 Zucchini

Seasoning
  • 1 tsp Sesame oil
  • 0.5 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Minced garlic
  • 1 tsp Sugar

Cooking Instructions

Step 1

First, prepare the leftover vegetables that will add richness to your doenjang sauce. I’m adding potato here for a delightful crunch, and it becomes wonderfully sweet as you chew! Dice 1/2 small potato into 0.5cm thick slices. Similarly, chop 1/2 small onion, 1 king oyster mushroom, and 1/2 zucchini into bite-sized pieces of about 0.5cm. Finely chop 2 Cheongyang peppers and 1/2 green onion to add a spicy kick and fresh aroma.

Step 2

Heat a pot over medium-high heat and add a drizzle of olive oil. Stir-fry the prepared vegetables (potato, onion, mushroom, zucchini) over high heat. Stir-frying the vegetables first enhances their natural sweetness and improves their texture. Cook for about 1-2 minutes until the potatoes become slightly translucent.

Step 3

Add 3 Tbsp of doenjang to the stir-fried vegetables and continue to cook for about 1 minute, allowing the paste to meld with the vegetables. Now, stir in 1 tsp sesame oil, 1 tsp sugar, 0.5 Tbsp gochugaru, and 1 Tbsp minced garlic. Mix well until all the seasonings are evenly incorporated. Reduce the heat to low, cover the pot, and simmer for about 10-15 minutes. Stir occasionally to prevent sticking. The sauce should thicken slightly and the savory flavor of the doenjang will deepen. Finally, add the chopped green onion and Cheongyang peppers, and simmer for another moment. Your delicious doenjang is ready!
