Hearty Dumpling Soup with Egg
Simple Recipe for Dumpling Soup: Perfect for a Rainy Day
A simple yet satisfying meal that’s perfect for a quick lunch. This recipe for Korean dumpling soup (Manduguk) with added egg is easy to follow and delicious.
Ingredients- 500ml Broth (anchovy-kelp or store-bought)
- 1 Egg
- 1/2 Scallion
- 7 Dumplings (frozen)
- Salt (to taste)
Cooking Instructions
Step 1
Prepare all your ingredients for a delicious and easy dumpling soup.
Step 2
In a small bowl, crack one egg and beat it well with a fork or whisk until the yolk and white are fully combined. This beaten egg will be drizzled into the soup later. You can also make a thin egg omelet, slice it finely, and use it as a garnish for a beautiful presentation. This is optional and based on your preference.
Step 3
Pour 500ml of your chosen broth into a pot and bring it to a boil over medium-high heat. Once boiling, add 7 frozen dumplings directly into the pot. There’s no need to thaw them beforehand; cooking them from frozen helps them maintain their shape better.
Step 4
As the dumplings cook, gently stir them with a spoon occasionally to prevent them from sticking to the bottom of the pot. Stir carefully to avoid breaking the dumplings. If you desire a richer flavor, you can lightly press 1-2 dumplings with the back of your spoon or chopsticks to release some of their filling into the broth, enhancing the soup’s depth and savory taste.
Step 5
Once the dumplings are cooked and floating to the surface, reduce the heat to medium-low. Slowly drizzle the beaten egg mixture into the soup in a circular motion. This creates delicate strands of cooked egg throughout the broth. Dumplings typically take about 5 minutes to cook; avoid overcooking, as they can become mushy and fall apart.
Step 6
When the egg is cooked and floats to the top, it’s time to season the soup. Taste the broth first, as some broths are already seasoned. Add salt or a dash of soy sauce as needed to achieve your desired flavor. If your broth is unsalted, you’ll need to season it more generously. For an extra layer of umami, a small amount of salted shrimp (saeujeot) can also be used for seasoning.
Step 7
Finally, add the chopped scallion to the soup for a fresh aroma and a touch of green. If you’re sensitive to the eggy smell, a pinch of black pepper can help neutralize it and add a subtle warmth.
Step 8
Your delicious and comforting dumpling soup with egg is ready! The combination of hearty dumplings and tender egg is truly satisfying. It’s a perfect dish for a rainy day or any time you crave a warm, flavorful soup. This recipe is so simple and foolproof, making it a go-to meal for anyone, especially those living alone. Enjoy your homemade Manduguk!
