Hearty Fish Cake Hot Pot (Eomuk Jeongol) – Baek Jong-won Style

I tried making the fish cake hot pot as featured in the Baek Jong-won’s Home Food section. This recipe is perfect for a cozy meal with family on a cold day, and also makes a fantastic dish to serve guests. The deep, refreshing broth combined with a variety of fish cakes is truly exceptional.
Hot Pot Ingredients- Various types of fish cakes (prepare according to your preference)
- 1 serving of Udon noodles
- 3-4 stalks of Crown Daisy (Shunkiku)
- 1 bunch of Scallions (cut into thick pieces)
- 2 Korean Green Chili Peppers (sliced diagonally)
Broth Ingredients- 15 Dried Anchovies (for broth, guts removed)
- 1/4 Daikon Radish (cut into large chunks)
- 1 Scallion (cut into large pieces)
- 1 Onion (quartered with skin on)
- 2 Korean Green Chili Peppers (halved)
- 3-5 pieces of Dried Kelp (Kombu, about 5x5cm)
- 15 Dried Anchovies (for broth, guts removed)
- 1/4 Daikon Radish (cut into large chunks)
- 1 Scallion (cut into large pieces)
- 1 Onion (quartered with skin on)
- 2 Korean Green Chili Peppers (halved)
- 3-5 pieces of Dried Kelp (Kombu, about 5x5cm)
Cooking Instructions
Step 1
Separate and prepare the vegetables for the broth and those for the hot pot. As shown in the image, to the left of the central onion, prepare the broth ingredients, and to the right, arrange the vegetables for presentation in the hot pot.
Step 2
Pour 2 liters of water into a pot and add all the broth vegetables (daikon, scallion, onion, green chili peppers). Add 1 tablespoon of minced garlic, 1 cup of soy sauce, 2 tablespoons of sugar, and 1 tablespoon of mirin. Bring to a boil over high heat to create a flavorful broth.
Step 3
Once the broth starts boiling vigorously, add the kelp (kombu). Reduce the heat to medium and simmer for another 5-10 minutes. Be careful not to boil the kelp for too long, as it can develop a bitter taste. Remove the kelp after simmering.
Step 4
While the broth is simmering, cut the fish cakes into bite-sized pieces. Also, prepare the crown daisy, scallions, and green chili peppers for the hot pot. Arrange the prepared fish cakes and vegetables attractively in the hot pot.
Step 5
Strain the finished broth through a sieve, pouring only the clear broth into the hot pot. Bring the broth back to a boil over high heat after pouring.
Step 6
Once the broth begins to boil, add the prepared udon noodles. Gently stir to separate the noodles. Continue to simmer briefly to allow all the ingredients to meld together.
Step 7
Finally, sprinkle a little red chili powder (gochugaru) to your liking for a perfect finish to your Baek Jong-won style fish cake hot pot! Enjoy this warm and delicious dish.
