Easy Fish Cake Udon Recipe: A Noodle Dish Using Ottogi Katsuo Bonito Soup Stock

Ingredients- 1 serving Udon noodles (frozen or fresh)
- 370ml Water
- 6-7 Tbsp Ottogi Katsuo Bonito Soup Stock (adjust to taste)
- A pinch of black pepper
- 1/2 Red chili pepper (for color and mild heat)
- 1/3 Scallion (for aromatic flavor)
- Fish cakes (eomuk) of your choice
- Shiitake mushrooms (optional, for added umami)
Cooking Instructions
Step 1
Pour 370ml of water into a pot and place it over medium heat. Prepare to move to the next step once the water begins to boil.
Step 2
Once the water is boiling, add 6-7 tablespoons of Ottogi Katsuo Bonito Soup Stock to create the broth base. It’s best to taste and adjust the amount according to your preference for a perfectly balanced flavor.
Step 3
Add the serving of udon noodles to the pot and gently separate them. Stir lightly to prevent the noodles from sticking together.

After adding the noodles, include the prepared shiitake mushrooms and fish cakes, cut into bite-sized pieces. Shiitake mushrooms will add a deep umami flavor, while fish cakes offer a delightful chewy texture and richness. Finally, sprinkle a pinch of black pepper for an aromatic touch.

Remove the seeds from the red chili pepper and thinly slice it. Slice the scallion diagonally. Adding these vegetables at the end will brighten the udon’s appearance and add a fresh aroma.
