  • 10 Tbsp Jin-ganjang (Korean soy sauce)
  • 10 Tbsp Kikkoman soy sauce
  • 20 Tbsp Mirin (rice wine)
  • 20 Tbsp Water
  • 3 Tbsp Oyster sauce
  • A pinch of black pepper

Place the thinly sliced bulgogi beef on paper towels and gently pat to remove excess blood. This helps reduce any gamey odors and ensures a cleaner taste.

Finely chop the scallions. These will be used as a garnish, adding color and a fresh aroma to your dish.

Slice the onions about 0.5cm thick or slightly thicker, according to your preference. As they cook, the onions will release their natural sweetness, enhancing the overall flavor of the Gyudon.

Now, let’s prepare the sauce that will define your Gyudon! Combine 10 Tbsp Jin-ganjang, 10 Tbsp Kikkoman soy sauce, 20 Tbsp Mirin, 20 Tbsp Water, 3 Tbsp Oyster sauce, and a pinch of black pepper. Mix well. This blend promises a perfect balance of savory and sweet!

Lightly grease a wide pan with olive oil and heat over medium heat. Add the beef (with blood removed) and stir-fry just until the surface changes color. Be careful not to overcook, as this can make the meat tough.

When the beef is about 70-80% cooked, add the sliced onions and continue to sauté. Once the onions become translucent and the beef is over 90% cooked, pour in about 10 Tbsp of the prepared Gyudon sauce. (Taste and adjust the amount of sauce as needed!)

Continue to stir-fry briefly to ensure the sauce coats the beef and onions evenly. Once the meat is fully cooked, pour the beaten eggs evenly over the entire pan. Absolutely do not stir. Reduce the heat to low and let it cook gently. The eggs will cook softly, adding a wonderfully moist texture.
