Place the julienned potatoes in a bowl of cold water and let them soak for about 10 minutes to remove excess starch. Rinsing off the starch prevents them from sticking together and results in a fluffier stir-fry.

Now, heat 2 tablespoons of cooking oil in a pan over medium heat. Add the drained julienned potatoes to the hot pan and begin to stir-fry them until they turn golden brown.
