Tuna Ssamjang Ingredients

  • Canned Tuna: 1 can (180g), drained
  • Onion: 1/2 medium, finely minced
  • Green Onion: 1/2 stalk, finely chopped
  • Cheongyang Pepper (or similar spicy chili): 1-2, seeds removed and finely minced (adjust to your spice preference)

Tuna Ssamjang Seasoning Ingredients

  • Gochugaru (Korean chili flakes): 1 Tbsp
  • Minced Garlic: 1/2 Tbsp
  • Doenjang (Korean soybean paste): 1 Tbsp
  • Gochujang (Korean chili paste): 1 Tbsp
  • Sugar: 1 Tbsp
  • Water: 3 Tbsp

First, prepare the ingredients for the ssamjang. Finely mince the 1/2 onion, 1/2 green onion, and 1-2 Cheongyang peppers after washing and peeling them. For the chili peppers, removing the seeds will reduce the heat. Open the can of tuna (180g) and drain out all the oil thoroughly by placing it in a sieve.

Now, let’s make the delicious tuna ssamjang sauce. In a small bowl, combine 1 Tbsp gochugaru, 1/2 Tbsp minced garlic, 1 Tbsp doenjang, 1 Tbsp gochujang, 1 Tbsp sugar, and 3 Tbsp water. Mix everything well with a spoon until smoothly combined. Ensuring the seasoning is well-blended is key.

Heat a lightly oiled pan over medium heat. Add the prepared ssamjang mixture and sauté for about 1 minute until fragrant, being careful not to burn it. It’s time to prepare the cabbage for wrapping. Hold the firm core of the cabbage and cut out a square shape from the center. This method helps to easily separate the leaves into nice, flat pieces perfect for making wraps.

Wash the separated cabbage leaves thoroughly under running water and pat them dry. Place the clean cabbage leaves on a microwave-safe dish. Microwave for 3 minutes until the cabbage is tender and pliable. This cooking method makes the cabbage much easier to chew compared to raw leaves.
