Main Ingredients- Pork ribs 12 pieces
- Cooking wine 1/2 cup (to remove pork rib odor)
- Water 12 cups (for broth)
- Potatoes 5 medium-sized

- Ginger 1 thumb-sized piece
- Perilla leaves 6 leaves
Seasoning Ingredients- Gochujang (Korean chili paste) 1 Tbsp
- Doenjang (Korean soybean paste) 1 Tbsp
- Minced garlic 1 Tbsp
- Gochugaru (Korean chili flakes) 3 Tbsp
- Soy sauce for soup 1/2 cup
- Fish sauce (anchovy or sand lance) 3 Tbsp

Cooking Instructions
Step 1
Rinse the pork ribs thoroughly under running water. To make them easier to handle during cooking, you can cut them into bite-sized pieces along the joints.

In a pot, add enough water to cover the pork ribs and pour in 1/2 cup of cooking wine. Once the water boils, add the prepared pork ribs and blanch for about 10 minutes. This step is crucial for effectively removing impurities and any gamey odor from the ribs. After blanching, rinse the ribs under cold water to remove any remaining residue.

Now, let’s start making the stew. In a large pot, add the blanched pork ribs and the peeled potatoes cut into large chunks. Bring the stew to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for about 50 minutes, or until the pork ribs and potatoes are tender. It’s important to cook them slowly until they are soft. If the broth reduces too much during cooking, add a little more water to ensure the ribs remain submerged. Just before serving, add the clean perilla leaves, cut into large pieces, and the sliced green onions. Simmer for another moment until wilted.
