Hearty Homemade Toast with Plenty of Fridge Veggies

There are times when you crave a sandwich packed with fresh vegetables, and other times when you yearn for toast topped with a thick, crispy fried egg patty. In reality, though, our toast often becomes a delicious meal born from clearing out the fridge. Shredding slightly wilted cabbage, adding sliced Vienna sausages you bought for tteokbokki, frying a thick egg patty, and then toasting bread until golden brown in butter creates a wonderful meal. This satisfying toast, made with simple ingredients, is sure to brighten your day!

Main Ingredients

  • 3 handfuls finely shredded cabbage (approx. 150g)
  • 17 Vienna sausages
  • 4 eggs
  • Pinch of herb salt
  • 4 slices of bread
  • 2 Tbsp butter
  • 4 Tbsp syrup (maple syrup, corn syrup, etc.)
  • 4 slices of processed cheese
  • Ketchup (to taste)
  • Mustard sauce (to taste)

Cooking Instructions

Step 1

First, wash the 3 handfuls of cabbage and shred them as finely as possible using a slicer. Place the shredded cabbage in a large bowl. Shredding the cabbage finely will help it mix well with the egg mixture and result in a tender texture.

Slice the Vienna sausages into bite-sized pieces, about 0.5cm thick, either diagonally or into rounds. You can adjust the size according to your preference.

Add the sliced Vienna sausages to the bowl with the shredded cabbage. Crack in 4 fresh eggs and season with a pinch of herb salt. If you don’t have herb salt, you can use a little regular salt and pepper.

Use a spatula or fork to gently beat the eggs until the yolks and whites are well combined. Ensure the shredded cabbage and sausages are evenly coated with the egg mixture. Don’t mix too vigorously.

Heat 1-2 tablespoons of cooking oil in a non-stick pan over medium-low heat. Pour the entire cabbage and egg mixture into the heated pan. Cook slowly over medium-low heat, as the eggs can burn easily. Gently swirl the pan to ensure the mixture spreads evenly.

Once the bottom of the egg patty starts to turn golden brown, use a spatula to cut it into four equal sections, like a ‘+’ sign. This makes it easier to flip and handle later.

Carefully flip the cut sections of the egg patty using the spatula. Cook the other side until it’s also golden brown. Continue cooking over medium-low heat until both sides are nicely browned and the patty is cooked through.

Now it’s time to toast the bread. Preheat another pan over medium heat and melt 1/2 tablespoon of butter. Be careful not to let the butter burn.

Once the butter is melted, place 2 slices of bread in the pan and toast them until golden brown on both sides. The bread will become crispy as it absorbs the butter.

When one side of the toast is golden brown, flip it over. Add another 1/2 tablespoon of butter to the pan and toast the other side until golden. Repeat this process for all 4 slices of bread. (Total of 2 Tbsp butter used for 4 slices of bread).

Spread 1 tablespoon of syrup evenly onto one side of each toasted bread slice. You can use maple syrup, corn syrup, or any preferred sweetener. If you don’t have syrup, you can use liquid tea (like tangerine or yuzu tea) for a unique flavor twist. (Total of 4 Tbsp syrup used).

On top of the syrup-coated bread, drizzle ketchup and mustard sauce to your liking for a balanced flavor.

Place 2 slices of processed cheese on top of the sauces. The melting cheese will help bind the other ingredients together. (Total of 4 slices of cheese used).

Layer 2 pieces of the thick, golden-brown egg patty on top of the cheese. The generous thickness makes it look appetizing.

Add another drizzle of ketchup and mustard sauce to taste for extra flavor. Be mindful not to add too much.

Finally, top with the other 2 slices of syrup-coated toast. Two hearty toasts are now complete! Wrap each toast tightly in plastic wrap to keep it from falling apart, then cut them in half for easier handling. Wrapping them makes them neat and easy to eat by hand. Enjoy your delicious creation!
