Essential Ingredients- 2 bowls of warm cooked rice
- 200g fresh bean sprouts
- 1-2 Cheongyang peppers (adjust to your spice preference)
- 1 stalk of green onion
- 2 fresh eggs
Cooking Instructions
Step 1
First, rinse the bean sprouts thoroughly under running water until clean. Place the washed bean sprouts in a pot, add 1,000ml (about 5 cups) of water, and cover with a lid. Bring to a boil over high heat.

While the bean sprouts are boiling, thinly slice the green onion and thinly slice the Cheongyang peppers diagonally. You can adjust the amount of Cheongyang peppers based on how spicy you like it.

Once the bean sprout soup comes to a rolling boil, immediately remove the lid and add half a tablespoon of coarse sea salt to lightly season the broth. This helps to eliminate any potential beany odor from the sprouts.

Next, add half a tablespoon of minced garlic and the pre-sliced Cheongyang peppers. These are key ingredients for a deliciously spicy broth.

To enhance the savory flavor, add half a tablespoon of salted shrimp and 1 tablespoon of Mirin (rice wine) to remove any fishiness and add depth. Adjust the amount of salted shrimp to your liking to get the perfect seasoning.

Tip! For an even deeper and richer flavor, you can add a tablespoon of a seasoning enhancer like ‘Cooking Essence’. However, this step is optional and the soup will still be delicious without it.

Finally, add the sliced green onions and let it simmer for another moment. Your refreshing and clean-tasting bean sprout soup is now complete.

Now, place 2 bowls of warm cooked rice into a stone pot (ttukbaegi) or a deep serving bowl.
