Hearty Korean Beef and Radish Soup (Sogogi Muguk)

Craving a comforting, hot soup on a chilly day? This Korean Beef and Radish Soup (Sogogi Muguk) is perfect for warming you up from the inside out! It’s simple to make and incredibly flavorful.
Main Ingredients- Beef (for soup, cut into cubes) 200g
- Korean Radish (Moo, about the same weight as beef or double) 1 piece
- Scallions 1 bunch
- Water 700ml
Seasoning- Soy Sauce for Soup (Gukganjang) 2 Tbsp
- Minced Garlic 1 Tbsp
- Salt 1/2 Tbsp (or to taste)
- Black Pepper a pinch
- Sesame Oil 1 Tbsp

Cooking Instructions
Step 1
First, pat the beef dry with paper towels to remove excess blood. Wash the Korean radish thoroughly. Chop the scallions into bite-sized pieces and set aside.
Step 2
Cut the prepared radish into approximately 2-3 cm cubes. Cutting them too small might cause them to break apart during cooking, so aim for a moderate size.
Step 3
Heat 1 Tbsp of sesame oil in a pot over medium-high heat. Add the beef and stir-fry until the surface is browned. This process helps to seal in the juices and enhance the flavor of the beef.
Step 4
Once the beef is browned, add the cubed radish to the pot and continue to stir-fry together with the beef for about 3-5 minutes, or until the radish begins to turn translucent. Stir-frying the radish beforehand makes the soup broth much more refreshing.
Step 5
When the radish looks slightly translucent, pour in 700ml of water. Add 2 Tbsp of Gukganjang (Korean soup soy sauce), 1 Tbsp of minced garlic, 1/2 Tbsp of salt, and a pinch of black pepper. Bring to a boil over high heat, then reduce to medium-low, cover, and simmer for about 15-20 minutes, or until the radish is tender. Finally, add the chopped scallions and simmer for a few more minutes.
