Stew Ingredients

  • 1 squid
  • 10 Vienna sausages
  • 1 small can Spam Lite
  • 1/2 block firm tofu
  • 1 bunch crown daisy (garland chrysanthemum)
  • 1/2 head napa cabbage (or small napa cabbage)
  • 2 Korean green chili peppers (cheongyang peppers)
  • 1/2 stalk green onion
  • Plenty of broth (anchovy, kelp, dried pollack, etc.)

Seasoning Paste

  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp minced garlic
  • 1/2 Tbsp minced ginger
  • 1 Tbsp oligosaccharide (or sugar)
  • 1 Tbsp cooking wine (mirin, etc.)
  • 2 Tbsp soy sauce
  • 1 Tbsp fish sauce (anchovy or sand lance) or crab fish sauce
  • Pinch of black pepper
  • 1/2 Tbsp kelp powder

First, combine all the seasoning paste ingredients in a bowl and mix them thoroughly with a spoon or whisk. Preparing the seasoning in advance makes it easy to adjust the flavor towards the end of cooking.

The foundation of a delicious stew is its broth! Boil a generous amount of broth using ingredients like anchovies, kelp, or dried pollack, whichever you have on hand. It’s important to keep the broth hot as you’ll be pouring it over the prepared ingredients. (Note: Using broth instead of plain water will result in a much richer and more refreshing taste.)

Now, let’s prepare the ingredients for the stew. Clean the squid and cut it into bite-sized pieces. Slice the Spam into cubes or any decorative shape. Cut the tofu into 1.5cm thick slices. Chop the napa cabbage into pieces similar in size to kimchi. Finely chop the Korean green chili peppers for a spicy kick, and slice the green onion diagonally. Wash the crown daisy thoroughly. In a wide pot, first lay down the chopped napa cabbage and minced green chilies. Then, arrange the sliced Spam, Vienna sausages, tofu, and squid on top. Finally, generously place the crown daisy over everything.

Evenly spoon the prepared seasoning paste over the ingredients in the pot. Carefully pour the hot, simmering broth over the ingredients. Once the broth begins to boil, you’re ready to start cooking.

As the broth comes to a boil, gently stir the stew with a spoon to dissolve the seasoning paste and ensure the ingredients are well combined. Once the napa cabbage has softened and the broth has developed a refreshing flavor, add the diagonally sliced green onions and simmer for a final moment to finish. The subtle aroma of the green onions will further enhance the stew’s flavor.
