First, wash the Napa cabbage thoroughly. Slice the thick stem parts thinly by butterflying them, or separate the leaves from the stems and chop them into bite-sized pieces (about 1.5-2 inches). This ensures the cabbage cooks evenly and becomes tender in the soup.
